<p>The MacBook has been working over-time recently, working on some fairly hefty image resolutions and demanding spot removal editing techniques (must remember to always clean the lens!). The 2TB hard drives are filling up fast and our online gallery is slowly increasing in size as we work hard <a title="Sam Cooke - Twistin' the night away" href="http://www.youtube.com/watch?v=jSoPeZMHMf4" target="_blank">editin&#8217; the night away</a>! (Helen does indeed have a good assortment of slacks!)</p>

<p>Anyway enough larking around&#8230; Since we got back we have spent some dedicated time and effort to work up some China images. Workflow amends&#8230; Levels. Colour correction (using a gradient map or colour balance). Contrast. Spot removals. Save TIFF. Engarge to desired size. A touch of unsharp mask if it&#8217;s required. Save JPG.</p>
<p>Here are a few to pay homage to Sam Cooke, twisting the night away and hopefully some inspiration for you guys to get out there and do something notworkrelated. Enjoy!</p>

<p>Recently on Twitter we were asked if we had taken part in the &#8220;My 7 Links&#8221; feature from <a title="Tripbase my seven links rules" href="http://www.tripbase.com/blog/my-7-links-the-rules/" target="_blank">Tripbase</a>. A week or so later we appeared in <a title="Wired2theworld My 7 Links" href="http://www.wired2theworld.com/2011/07/18/my-7-links-a-look-back/" target="_blank">Wired2theworlds</a> post and they nominated us to do exactly the same. So we both sat down together and decided what previous posts fitted the following criteria&#8230;</p>

<p>The post that sprung straight to our minds was our <a href="http://www.notworkrelated.co.uk/2011/02/30th_3st_jan_koh_kong/ " target="_blank">Koh Kong Island</a> tour in Cambodia.</p>
<p><img class="size-thumbnail wp-image-5258 alignleft" title="notworkrelated-koh-kong-30th-31st-40" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/02/notworkrelated-koh-kong-30th-31st-40-188x188.jpg" alt="Koh Kong Island Trip, Cambodia" width="188" height="188" />We loved everything about this part of our travels through Cambodia&#8230;Bartering with Mr T to arrange our own personal tour with two other travellers Carl and Ali, we arranged a tour that doesn&#8217;t usually happen over 2 days. We had two devoted locals one acted as our tour guide, the other as the boat driver. We visited the most desolate, untouched beaches either of us have ever experienced and swam in crystal clear blue water. We had every beach completely to ourselves and ate amazing fresh seafood, barbecued and prepared by our two trusty Cambodian friends. To top this off we stayed at a very local floating fishing village, played with the children, visited their school, played pool with the locals and eventually stayed in one of their family homes. This was a truely authentic Cambodian home-stay experience, far far away from any tourists.</p>

<p><img class="alignnone size-large wp-image-2353" title="notworkrelated_Yuanyang_55" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/01/notworkrelated_Yuanyang_55-494x329.jpg" alt="Yuanyang Rice Terraces at Dawn" width="494" height="329" />We were pretty happy to discover that our most popular post (according to Google Analytics) was from our <a href="http://www.notworkrelated.co.uk/2011/01/yuanyang-16th-18th-dec/" target="_blank">Yuanyang Rice Terraces</a> visit in Yunnan Province, China. The bus journey from Kunming was as ever a little scary in parts and often delayed along the narrow mountain roads, and when we arrived in Yuanyang there were no views, only fog! This is very normal for this part of the world though, often the valleys are deep-set in very thick fog, but when the fog lifts the rice terraces reflect all the light around in their pools of water stretching out for miles. This is a breathtaking part of the world, with a very strong traditional and cultural heritage stemming from ancient hill tribe minorities. It is one of the highlighted things to do in China so perhaps this explains why it has been our most popular blog post. Sunny&#8217;s Guesthouse is also recommended in the Lonely Planet so this may have helped!</p>

<p><img class="size-thumbnail wp-image-3455 alignleft" title="notworkrelated_MuiNe2_36" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/02/notworkrelated_MuiNe2_36-188x188.jpg" alt="MuiNe Beach, Vietnam" width="188" height="188" />We haven&#8217;t really gone into too much controversy whilst travelling through Asia, there are many areas we could have touched on with regard to Communist run governments but we weren&#8217;t there to be political journalists! However whilst we were in Vietnam staying in <a href="http://www.notworkrelated.co.uk/2011/02/mui-ne-20th-23rd-jan/" target="_blank">Mui Ne</a> on the coast we did experience first-hand a little bit of uneasy Police action. Two policemen decided to stop us not long after we had set off on a hired motorbike for the day. Their reason being that we didn&#8217;t have a Vietnamese drivers license! To cut a long story short, TET was one week away and we were told after our shared $50 dollar fine with the bike owner that this sort of thing does happen quite frequently around the National Holidays as the Police are in effect collecting their beer money in the form of fines!! Thanks for that one! This story features in the second part of the post.</p>

But the most helpful post would be our <a href="http://www.notworkrelated.co.uk/2011/05/top-five-tours-asia/" target="_blank">Top 5 tours in Asia</a>. We&#8217;ve gone into who we booked it with and why, the costs, what we thought was good, bad and so on. We didn&#8217;t always choose the obvious tour with the obvious tour operator so we were really happy with the tours we chose and wanted to share this with the rest of the travelling community.</p>

<p><img class="alignnone size-large wp-image-5100" title="notworkrelated laos luang prabang 56" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/04/notworkrelated-laos-luang-prabang-56-494x328.jpg" alt="Luang Prabang, Laos" width="494" height="328" />Not an obvious choice when it comes to written content and the response we received, but the post focusing around our stay in <a href="http://www.notworkrelated.co.uk/2011/04/laos-luang-prabang%E2%80%9325th-feb-1st-mar/" target="_blank">Luang Prabang</a>, Laos has proven to be very successful. This is down to the imagery that we shot whilst we were staying there. We ended up staying longer in this quaint World Heritage town, and shot some really atmospheric photography centred around colour, texture and mood along with some great documentary work of locals and tourists in and around the place. We&#8217;ve also had one image accepted for an International Award and our first print sale came from some imagery contained within this blog post.</p>

We loved our imagery from our day here, very atmospheric with layers of mist encompassing ornate hand carved palaces, bridges and pagodas. Very easy to get to if you take the metro there which means it only costs 20p each way!! The site is huge, and we could have easily spent 2 days if not longer to capture the sheer essence of the Summer Palace site. Most people visiting Beijing will focus on the Great Wall, Tiannamen Square and the Forbidden City but we think The Summer Palace should be way up there on that list!!</p>

This shows us setting off from the UK and records our first day as we arrived in Tokyo. We were both jaded from jetlag and the Leica was still an exciting new tool for us to photograph with. On the Tokyo metro we snapped away discretely at our fellow passengers, managed to go the wrong way, and had our first taste of authentic Japanese noodles! It was all so new and exciting back then and we were on a high with street photography, getting the first travel blog-post out and starting our journey.</p>

<p>This is the first in a series of reviews taken from our experiences of several cooking classes that we participated in whilst travelling through Asia. We&#8217;re both foodies and love to explore new cuisine, this could have something to do with creativity. We both love to photograph and create nice imagery and design and we both like to design and create new and exciting food, and then photograph it! It all seems to be very complimentary!!</p>
<p>Whilst on the road, living out of our bags, on buses, trains and in hostels we didn&#8217;t get to cook and prepare our own food nearly as much as we would do on an ordinary day back home. In China we were really luck whilst staying in Beijing, we had an apartment for a month which mean&#8217;t we could go out and choose our ingredients from the local farmers market, this in itself was such a fantastic experience. Eating out all the time does take it&#8217;s toll but this is also part of the experience of exploring a country and it&#8217;s delights.</p>
<p>Taking part in a cooking class every so often mean&#8217;t we could explore further into the way the region or the country works with their local ingredients and taught us about the principles of their cuisine.It also mean&#8217;t we could eat everything we cooked!</p>
<p>We&#8217;re going to start with a course that we both loved and rate very highly in our travelling and food experiences. This was at The Yangshou Cooking School in Yangshou, Guangxi Province, China.</p>

<p>Their location on the banks of the Li River is stunning surrounded by karst peaks, bamboo rafts, and tourists! The course we did was a half day class starting at 8am with a local market tour. This is something that is very consistent with cooking courses in Asia, always starting with a market tour to give you an insight into where they source their ingredients from, what is local to the region and the atmosphere of a busy market place can be absorbed. Our chef and guide Kelly picked up on key ingredients that we would use such as bamboo shoots, chilli, chinese mushrooms and chinese eggplant before taking us back to the school.</p>

<p>We were informed about the morning, what we would be cooking and how we would do it. We each had our own cooking station with a wok on a gas stove, our own chopping boards, knives, bowls, oils and sauces for cooking with. The ingredients were portioned out for us and we would then prepare each dish before cooking it. Kelly demonstrated and then we cooked, and then we ate! For the final 4 dishes though we cooked them one by one and then had our own little banquet sat outside with the riverbanks below us &#8211; pretty idyllic!</p>

<p>Chinese cooking is all about sharing and dishes are served as a matter of balance. Hot and spicy dishes such as chicken with ginger and chilli should be offset by cooling preparations such as steamed fish or stir fried vegetables. A little bit of Yin and Yang occurs and equal attention should be paid for the balance of the food&#8217;s taste, texture, size, shape and aroma.</p>

<p>We had previously noticed how much oil was used in Chinese cooking, but on this particular course there wasn&#8217;t quite so much oil used and the dishes were very tastey and true to the Guangxi region. Not all Chinese food is the same, as we travelled from region to region we experienced subtle and strong differences in the presentation, spice, and taste.</p>

<p>There were around 10 of us in the class with a good mixture of young and old, and vegetarians were catered for equally. All in all we learned a lot about the values of Chinese cooking as well as picked up on some new and exciting recipes, which we think we could cook when we&#8217;re back in our own kitchen again.</p>

<blockquote><p>Steamed Stuffed Vegetables</p></blockquote>
<p><img class="aligncenter size-large wp-image-2781" title="Yangshou Cooking School" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/01/notworkrelated_Yangshou3_24-494x329.jpg" alt="" width="494" height="329" />50gms minced pork / use finely chopped firm tofu for vegetarian option<br />
1 tablespoon of Chives &#8211; chopped<br />
One quarter teaspoon of salt<br />
Mixed vegetables &#8211; peppers, tomatoes, mushrooms, courgette,</p>
<p>Mix the mince/tofu, salt and chives together. Stuff vegetables and steam for 15 minutes in a steaming basket. (Can use boiling water in a pan with an oven proof glass bowl instead and place vegetables in the bowl and then cover)</p>
<p>This dish is great as a starter and would be good at a barbeque or for a little tray of canapes!</p>
<blockquote><p>Beer Fish</p></blockquote>

2 tablespoons of peanut oil<br />
Half tomatoe &#8211; chopped<br />
Half green, half red pepper &#8211; sliced<br />
1 tablespoon of sliced garlic tops or spring onions<br />
1 tablespoon ginger &#8211; sliced<br />
2 cloves of garlic &#8211; crushed<br />
1 tablespoon of soy saice<br />
Half teaspoon salt<br />
Half glass of beer</p>
<p>Heat the wok, add oil and leave on full heat. Turn down the heat, put fish into work skin down, add salt on top of fish. Fry on each side for about 3 minutes making sure skin is brown. Put all veges, garlic and ginger on top of fish. Pour on soy sauce and beer. Cover with lid and cooking for 5 minutes. Remove lid add spring onions, reduce liquid for 2 minutes. Serve.</p>
<p>This is a really tastey dish indeed!! It&#8217;s so easy but we found it&#8217;s all about timing, adding the ingredients at the right time. A useful hint on the crushing of garlic &#8211; all we did was smash it with a large flat knife and that was that &#8211; no extra chopping required.</p>
<blockquote><p>Eggplant Yangshou Style</p></blockquote>

2 tablesppons of peanut oil<br />
Half red pepper &#8211; sliced<br />
One quarter teaspoon of ginger &#8211; sliced<br />
2 cloves of garlic &#8211; crushed<br />
2 spring onions &#8211; sliced<br />
Quarter teaspoon of salt<br />
One teaspoon soy sauce<br />
Half teaspoon oyster sauce</p>
<p>Heat wok and add oil. Heat until oil is smoking and then add eggplant and fry until browned and cooked. Move eggplant to side of wok, reduce heat and fry garlic, ginger and pepper for one minute. Mix eggplant with vegetbales, salt, soy sauce and oyester sauce. Add spring onions. Serve.</p>

<p>Up early for our last time in Yangshou we were picked up by taxi from Trippers to be dropped off at the coach station for our journey to <a href="http://wikitravel.org/en/Nanning" target="_blank">Nanning</a>. It took around five hours or so to reach Nanning and we jumped on a bus to make our way to the <a href="http://lotuslandhostel.spaces.live.com/" target="_blank">Lotusland</a> hostel. We found it relatively easily and checked into our double room which was small but functional and clean. We headed to the booking office to book our bus journey into Vietnam which cost £15 each. Looking for some food we followed the map provided by the hostel and decided to go to a restaurant with an English menu. The food was pricey and not very good, with Dave having a difficult time eating his food with all the bones in his chicken curry! On the plus side the steamed and fried dumplings with a custard style sauce were the highlight of a disappointing meal.</p>
<p>The following day we ate our own breakfast in the hostel, as they do not provide food, but a microwave and bowls and then washed clothes and hung them out to dry on the roof of the hostel. We walked into town to see what Nanning was like during the day. It&#8217;s a typical Chinese city full to the brim of shops and little food places.</p>
<p>There is a free museum called <a href="http://www.chinahighlights.com/nanning/attraction/guangxi-museum.htm" target="_blank">The Guangxi Provincial Museum</a> not far away from the center of town, it took around half an hour to walk there from the hostel. They were showcasing the Nanning Institute of Art and Design degree shows, which were quite impressive with fashion and product design, architecture, 3D and visualisation. It was great to see what the students are completing for their degree levels in China. There are also some permanent exhibitions in the museum featuring ancient drums, jewelery and other artifacts. Afterwards we were feeling hungry and found a Japanese restaurant in a shopping mall which helped quench the hunger pains.</p>
<p>We met up with Jane, who we had met in Dali, at the hostel and decided to go for food. Walking around we found a fast food style Chinese restaurant and had some pretty good food. The food was served in a wooden basket which was interesting, but tasty.</p>
<p>Neon lights and people dancing in the parks were our entertainment for the walk back to the hostel and then an early night as we had a change of Country tomorrow and we were excited to see a new landscape and culture of Vietnam.</p>

<p>So another day in Yangshou beckoned and the weather was still on the chilly side with plenty of moisture thrown in for good measure. We had heard about some <a href="http://en.wikipedia.org/wiki/Tai_chi_chuan" target="_blank">Tai Chi</a> lessons that Trippers could organise for guests with a local tutor, so we booked ourselves onto a course to see if we could remember anything from our previous lesson in Beijing. The tutor was really good at explaining what to do and helped you into the positions but wasn&#8217;t overly fussy if you could not manage it each time. This made the class go far more smoothly and it was very enjoyable. It&#8217;s amazing at the power that can be generated from simple moves and relaxed muscles when defending yourself. Dave got tested on a few times again to show what the motions were used for in self defence. It was freezing on the rooftop even though we had many layers of clothes to try and keep us warm!</p>
<p>After the two hour lesson we headed to the cafe for some warmth and food. We opted for more ginger and honey tea, which is so good, but so sweet, and some lunch. We had heard from other guests that the dragon eggplant was a good choice so we opted for the non-pork option and some tofu. We have eaten our fair amount of eggplant over the months in China, but this dish blew them all out of the water! It was amazing. Slightly fried like a tempura batter with a great sauce and veggies on top. Really great, we loved it.</p>
<p>We decided to head into the main town to walk off lunch and see if we could find bargains on sunglasses and some nice cushion covers that Helen had her eye on in a funky little shop on West Street. They were costly and they wouldn&#8217;t budge on the price, so we bought just the one and decided to see if we can get it replicated either back in the UK or maybe in Vietnam. On our way back to the hostel, playing on the public exercise machines by the river, we bumped into Maayke and Alex who were staying at Trippers and decided to have a walk down to the river. More often than not you&#8217;ll find a very picturesque place that in areas tends to lend itself towards being a dumping ground, this is the case we&#8217;ve seen across China. It is a case of the beauty and the beast at times.</p>
<p>Evening meal was again back at… you guessed it… Trippers! Comfort food to the max, soup, cheese burger and the amazingly tasty apple crumble with ice cream! Not the most classic &#8220;Chinese&#8221; of meals but you have to have some tastes of the west every so often. After some cards and a few drinks we headed to bed in the knowledge that we would have the dorm all to ourselves that evening. As soon as we had closed the door to the room a bunch of four Irish lads burst onto the scene but exited for food pretty quickly as they&#8217;d just got in from Shanghai. Misfits it was!</p>
<p>There were a few snores that night, but it wasn&#8217;t too bad for Helen sharing a room with 4 other lads!!</p>
<p>The next day was our final day in Yangshou town and along came the wet and cold weather. We had more editing and writing to catch up on so the crappy weather was a good excuse to stay inside, drink ginger and honey tea and keep warm. We finally had enough of work and decided to head out for a walk into the countryside which got the blood pumping and warmed us up no end. There are some really interesting walks and exploration to be done around China and you will always come to a little village where photograph opportunities just jump out.</p>
<p>For food we headed into Yangshou to find something cheap and not the hostel food, even though it was lovely, we wanted something else and some new scenery. We found a place and order our food. The food was very average and we were both disappointed. Helen&#8217;s vegetable noodles soup dish came with chicken in it and had very little flavour. We even asked for some chilli to make it more interesting but all we were given was Tabasco sauce! Not very Chinese in style or flavour.</p>
<p>Back at Trippers we proceeded with yet more writing and relaxing in the cafe/bar with hot chocolate. Pizza was required to forget the taste of lunch and Trippers duly obliged again. The Irish boys were having food, drinks and they cracked open the game Risk and asked Dave if he wanted to join in. Some good quality lads time was taken up, along with beers and world domination. Helen went to bed and Dave almost conquered the world, but he was too nice to the opposition! The bar closed up at 11pm and that was the end of that! We hope the lads made it to Hong Kong on time, we are sure that there train took longer that the one hour that they were told by someone in the hostel! It takes at least 10 hours we would guess!</p>

<p>We had breakfast at the hotel in the form of muesli and fruit before going off on bikes for the day. At Bamboo they have a good choice of mountain and city bikes (we opted for mountain bikes of course) perhaps some of the best bikes we&#8217;ve used on our travels so far!</p>
<p>We had a map with some good trails outlined and so off we went in the hopes of finding some less tourist-driven villages. Finding the right path is okay to start with as you head out of Yangshou town via the back roads and then there is a path that cuts under the bridge and from here you get to a gravel road, which is pretty tricky to ride over, although much more manageable if you have a decent mountain bike &#8211; you often see people on tandems and city bikes on this kind of terrain!! From here you go towards smaller paths which take you through farmland and villages, you just head north up the <a href="http://en.wikipedia.org/wiki/Li_River,_Guangxi" target="_blank">Li River</a> towards <a href="http://en.wikipedia.org/wiki/Moon_Hill" target="_blank">Moon Hill</a>, its a long journey on bikes and we often found ourselves the only people on the roads and thinking we may be on the wrong path.</p>
<p>After a brief stop for satsumas and snacks we went on our way to Moon Hill. When we arrived there were many tourists who were either enjoying the views, shopping, eating or planning to take a trip up the hill. It was getting close to 4pm by this time and we&#8217;d been cycling for the past 4 hours so decided not to climb the hill. But we did stop for some fresh corn and a few photos of the random tourist attractions such as a monkey dressed in an Asian suit posing along side happy holiday makers at what cost we didn&#8217;t stop to find out.</p>
<p>It only took about another 45 minutes or so to get back into Yangshou mostly on the high way which was in no way as satisfying as going through all the villages and countryside. When we got back we opted for a spot of Chinese food at another Lonely Planet recommendation Kelly&#8217;s. The food was fairly good and we weren&#8217;t charged too much for it either. Afterwards we went o <a href="http://www.monkeyjane.pyksy.com/" target="_blank">Monkey Jane&#8217;s</a> for a few drinks just to get familiar with the place before the big bash the following night. They also do really cheap beer!! We met a group of travellers who invited us to play cards with them…8 games of Shithead later and we were ready to call it a night. We had a good link with one of the guys as he&#8217;d been traveling with someone we&#8217;d met in Dali, I picked up on his Irish accent after Jane had said we may bump into them. Small world this traveling lark!</p>

<p>We went out for a bike ride with one of the Chinese girls&#8217; Sylvia who was staying in the dorm with us, she was friends with another of the girls working at the hostel. It was good to have her with us as she could help us to find our way by asking the locals which way to such and such a place. She wanted to go to a specific village called <a href="http://www.chinadiscover.net/china-tour/yunnanguide/yunnan-dali-xizhou.htm" target="_blank">Xixhou</a> which is about 20km away from Dali old town. We wanted to cycle through some of the villages closer to the lake so we could explore the farmland, the most direct way would be to cycle along the high way for the entire ride but that&#8217;s no fun, so we compromised and spent some time cycling to the villages and some time catching up and taking the highway to the furthest place.</p>
<p>The farmland in Dali is very lush and extremely beautiful to photography. During our stay in Dali the sky was a perfect blue and it was a very comfortable temperature indeed, only being cold in the shade. By night it dropped significantly but we had electric blankets to cope with this!</p>
<p>So we took in the scenery around us, some farmland, some lake and some road. It was stunning. We got to Xixhou at around 3pm and ambled through the village market before stopping for some very good value soup rice noodles. For 3 of us to eat it cost around £2.80, and the food tasted really good. The only bad thing was a local guy pestering us for left over food and drink, he wouldn&#8217;t leave us alone and eventually got what he wanted. Still the setting took us away from this. We continued out of the village and took the road to some older parts of the area. Once more fantastic views, terraces and buildings surrounded us.</p>
<p>We decided to make our way back at around 4pm and set off for Dali. We were going quicker than Sylvia on her lady-like bike so we waited for her every so often, plus the drivers on the road aren&#8217;t the most reliable often overtaking two cars in one go so we wanted to make sure we were all with us. When we got back Sylvia joked about how fit we were compared to her and she said she&#8217;d only ever ridden a bike once before in her life. Considering this fact she did very well indeed.</p>
<p>When we got back we ate at an Indian restaurant down the road from our hostel and enjoyed more chai. Back at the hostel there were a few more travelers, Helen got chatting to Jane who she&#8217;d seen at various other places around China. It&#8217;s very easy to bump into people when you use <a href="http://www.hostelworld.com/" target="_blank">Hostelworld</a> for recommendations on where to stay. Many people also choose to travel through South China from Vietnam as it&#8217;s a good route and the weather is pretty good in Yunnan.</p>
<p>So it was our last night in Dali and we really loved the town and the hostel had a nice vibe too. We decided to nip back to Bakery 88 the next morning to get some take-away sandwiches with very good cheese and meat! Yum!! We also sneaked in a few more granola slices.</p>
<p>The bus back took the scenic route as part of the highway was closed but this wasn&#8217;t a bad thing as it meant we got to drive through some more beautiful countryside and villages. It was quite a luxury bus with only a few of us on board, and we got back to Cloudland at around 7pm. We had some food, chatted away and got ready for our flight to Guangzhou the following day.</p>

<p>We used <a href="http://www.hostelbookers.com/hostels/china/kunming/7643/" target="_blank">Cloudland</a> once more as a base for our luggage and set off to get a bus to <a href="http://www.travelchinaguide.com/cityguides/dali.htm" target="_blank">Dali</a>. The west bus station is easy to get to from town and we got there by 1pm just in time to get the next bus for Dali. This left at just after 1pm and took around 4-5 hours to get to Xiaguan which is the new town of Dali, from here we paid around 2yuan each to take a local bus to Dali old town. It takes around 30 minutes to make the journey and we had some guidance at the other end from a school girl willing to point us in the right direction.</p>
<p>We booked 3 nights at <a href="http://dalihump.com/en/main/home" target="_blank">The Dali Hump</a> which we soon realised was a good move. It&#8217;s a good place to meet other travelers and most people tend to stay a lot longer than planned. We arranged a few things for the next day and went out to get some food. Cafe Du Jack is another Lonely Planet recommendation and served a lovely tofu claypot dish with a nice spice to accompany it, Dave enjoyed some Singapore style rice with egg and then we followed this up with a calzone-style looking apple pie, it did the trick.</p>
<p>For the first night there were only 3 of us booked into the 8 bed dorm and it filled up as the nights went on. The rooms are really spacious but at this time of year the cold nights settle in and the thin curtains do nothing to contain heat. We did pay a little extra to go in the dorm room with en-suite and electric blankets which was a nice bonus.</p>
<p>On our first day in Dali we hiked up one of the <a href="http://en.wikipedia.org/wiki/Cangshan_Mountain" target="_blank">Cangshan Mountain</a> routes, walking up through the top end of the village and out into farmland. There is a 30 yuan p/p entrance fee for the mountain area but there weren&#8217;t many walkers on the mountain so we had the paths to ourselves. We passed by many gravestones and tombs located around the hillside and there was a strong light coming through the tree tops. We wanted to get around to the Zhonge Temple which is located on the mountain side and is where the cable cars go to, from here there is a steep path down to the bottom where you just stay under or around the cable cars and you&#8217;ll reach the bottom okay. Along the way we had landscape views of Dali city, Erhai Hu (lake) and farmland, it was a good 4 hour hike from start to finish but we were keen to get back to The Hump so we could join a group for a market tour to buy food for that night&#8217;s meal.</p>
<p>We just about got back in time at 1.30pm and the others had waited for us, we all went to the local market with Chung Lee who was our cheeky cheerful hostel guide. She certainly added personality to the outing. We took in the market, put 30 yuan into the pot each and chose fresh vegetables and even picked out our own chicken from a cage. Dave witnessed the 10 minute aftermath of the chicken being killed, de-plucked and ready to go in the back of the basket. In it went with the fresh aubergine and herbs bought earlier on. It&#8217;s a pretty crazy environment compared to British markets, traditions here are very different and it&#8217;s quite normal for people to pick out chickens, fish and even dogs to be killed for their evening meal.</p>
<p>We arranged to meet everyone back in the kitchen at 4pm to start the preparation for the evening meal. So we joined a few others in search of a talked about Tibetan bread on the street, we&#8217;ve eaten something similar in Beijing, it&#8217;s a large flat bread with herbs and spice on top, often there is minced pork added onto it, but this one seemed to be meat free? Before going back to the hostel we went to another talked about favourite in the area The 88 German Bakery (a somewhat controversial name by all accounts according to some German backpackers at the hostel) but don&#8217;t let this put you off. The deli style cafe is very welcoming, and we tasted a fantastic chai and granola biscuit enough to warrant another visit a few days later.</p>
<p>So after being spoiled at The German Bakery we found the others in the kitchen and began to cook. It was a little messy and perhaps disorganised but Chung lee loved toggle us all a role and asked us to cook some dishes we want to. She was pretty fussy though and preferred to be the one dishing out the instructions, at times it was a little &#8216;too many cooks…&#8217; but it was all fun and we managed to cook up quite a feast including eggplant and peppers, spicy fish, mushroom soup, vegetable stir fry, chicken and beef dishes. Aside from the slaughtering of the chicken and then watching Chung Lee massacre it in the kitchen it was a pleasant experience! We all ate together in the bar upstairs and enjoyed cheap beer too. We followed this with a few drinks in town at a crazy little place ran by a frenchman called Mushroom…go there and you will not be disappointed.</p>

<p>We left one big bag behind at <a href="http://www.hostelbookers.com/hostels/china/kunming/7643/" target="_blank">Cloudland hostel</a> as they offer a free luggage storage service for 3 days (thereafter its 3yuan per day). So we took advantage of this and packed most things into one main rucksack and had the smaller ones for cameras and so on. The bus left from the one bus station in Kunming which is way out of town, it takes around 45 minutes to get there and will cost 50 yuan by taxi. We were lucky as two girls from the hostel were making their way to the bus station so we shared the taxi ride with them. They were also going all the way to <a href="http://www.chinatrekking.com/destinations/yunnan/yuanyang" target="_blank">Yuanyang</a> so it was good to know there were more travelers making their way there.</p>
<p>The bus left at 10am but it was a chilly start to the day, much cooler than previous days and all the way to Yuanyang this weather seemed to stick with us. There were a few stops along the cliff edged roads, one of which led us to some interesting outside toilets others were drop offs for extra parcels and passports the driver seemed to be transporting. There was a bit of a traffic jam coming into Xinjie where the main buses will stop at for the terraces and we eventually pulled up at 4pm. Greg from <a href="http://www.tripadvisor.co.uk/Hotel_Review-g1410718-d1586126-Reviews-Sunny_Guesthouse-Yuanyang_County_Yunnan.html" target="_blank">Sunny&#8217;s Guesthouse</a> was there to meet us, he&#8217;d been staying there for some months helping out and as their English speaking guide for the guesthouse. His English was perfect and this in itself was very helpful in negotiating the mini bus fare back to their village. The two girls we had met on our way to the bus also joined us, so all in all we had managed to save a few yuan by sharing taxis and so on.</p>
<p>It was pretty foggy which we&#8217;d heard is very common at the terraces as they are set at altitude so often the mist settles into the valleys and takes a day to clear. We stopped at a few vantage points along the way which gave us a hint of what to expect when the weather clears. Sunny&#8217;s Guesthouse is one of very few accommodations in the Douyishi village. It is run by husband and wife and their sun Frank, they are currently doing some renovation work (as is often the case in off season China) and they are limited when it comes to heating, but it has amazing rooftop views and is located at the foot of the rice terraces in the village so we were spoilt for choice! We opted for a double room mainly due to body heat, it was freezing!! We did have an electric blanket though so there was comfort in that. The mist didn&#8217;t clear but we got a few shots of the landscape before dinner and two of the other guys staying there turned up from a stroll so there was a good group of us around the table. Dining takes place in a separate outer building from the main guesthouse, Frank is the chef and he kept churning out top quality home-cooked organic dishes one plate after the other. We also enjoyed the red rice which is grown in the Yuanyang rice fields. The family ate at the table next to us which is great in itself as they really do welcome you to their home. We stayed up and chatted next to the little fire in the communal area and then settled in for the night in anticipation of a good sunrise the next morning.</p>
<p>We woke early but the fog was still with us so we stayed in the warm bed a little longer before getting up to join some of the others for breakfast. They were disappointed as the whole time they were there the fog was too! Still even the fog offers some great opportunities pictorially. For breakfast we enjoyed an eggy bread style theme; egg pancakes with jam (very tasty) eggy french bread (good) and fried egg…it did the trick but was a little too stodgy! Still it was hot food and the air was cold. Nathan from San Francisco had arrived at 5am so he joined us and we chatted about plans for later on hoping to catch the sunset if the fog cleared.</p>
<p>After breakfast we went for a stroll into the village. Still foggy, adding atmosphere to the surroundings, we wandered past the pigs, chickens and cows roaming around people&#8217;s houses. There is very much a sense of community here and we learned that the rice terraces belong to the villagers and they share out between themselves what they grow, we figured it must be the same for the animals. The houses are very simple, many with straw roofs and it&#8217;s a very basic way of living (although we&#8217;re sure they have large flat screen TV&#8217;s tucked away in some of them!) It&#8217;s a very picturesque place and making our way down to the terraces was really rewarding even in the fog. You can walk into them quite far on the small paths, the terraces can be quite abstract too with left over rice plants sticking out of the water. At times the sun peeked through the cloud and offered some strong reflections, but the fog would soon swallow it up again.</p>
<p>We arranged to meet Nathan, Frank and one of the girls at 4pm to head out in search of some better weather later on. This meant we had the day to catch up on editing, the electric blanket was turned on, we wore all the clothes possible and every so often we would pause for a run up onto the roof terrace to catch the views before going back down again. Helen got pretty cold so along to the <a href="http://www.youtube.com/watch?v=H0C7NhXffKw" target="_blank">Chemical Brother&#8217;s Push the Button</a> album she had a boogy in the room to warm up!</p>
<p>We met up with the others at 4pm to go in search of a sunset, Frank had heard that the sun was out in a few areas of the region so we went off to find them. Some of the best views were found at roadside platforms where we could catch the terraces for free, the bigger more well known viewing areas are all charged on entry so we had to toy with the plan…if the weather isn&#8217;t going to be good over there let&#8217;s see what we can find for free rather than getting there, paying and having no views. When we originally came into the Yuanyang region we managed to avoid the entrance fee by sitting in the back of the mini van and being unnoticed by the gateway keepers. To access the villages alone there is a 60yuan per person fee for tourists, but if it&#8217;s foggy, the weather is bad or you can hide behind local drivers then you will miss this fee. We were nearly charged on the second day but Frank managed to talk us out of it.</p>
<p>Finally we reached an area that had clear views and strong sunset colours reflecting off the water filled terraces. It was quite a special moment, we could see the fog coming in on different sections of the terraces. Wow! The terraces go on for what seems like miles, and this was only one section!</p>
<p>We did have to pay Frank for ferrying us around but it was only 30yuan per person so that wasn&#8217;t too bad at all, he also took off some money for us as he didn&#8217;t take us all the way to other viewing areas, this was mainly because the weather wasn&#8217;t as clear there anyway so it did us a favour. Back at Sunny&#8217;s we enjoyed another family meal, perhaps not as good as the first night, but there was plenty of choice and we were joined by some more guests. We stayed up with Nathan and Greg sipping on hot tea and chatting away until it was bed time. We were leaving early the next day but had vowed to be on the rooftop for the sunrise.</p>
<p>6.30am and we were on the roof watching the sun rise over the mountain tops and Dave shot some more slow shutter imagery on the Olympus Pen. If we&#8217;d have had more time we would have loved to stay for that day as we knew the weather was getting better, but we had other plans to go further north from Kunming and we were happy with what we had seen.</p>
<p>A quick breakfast and we were all squashed into the mini van to take us back to the bus station. This time we shared the journey with 4 others so once again costs were reduced. The bus left at 8.30am and along with Nathan we made our way back to Kunming. It was a much warmer day all round and we arrived in Kunming at 5pm, Nathan shared our taxi and covered the costs as a work expense which we were very grateful for. We said our goodbyes and landed at Cloudland at around 6pm in time for dinner.</p>
<p>A few hellos to other travelers we had met in Shanghai and we went out to one of the local eateries for some great cheap local food. This was followed by a quiet night at the hostel and arrangements to take a bus to Dali the following afternoon.</p>

<p>As the weather and temperature was so good in Kunming we thought it would be a great chance to hire some bikes and get out and about. We made a packed lunch and hired the bikes from Cloudland Hostel. They were decent mountain bikes and the hostel provided a map and written instructions on a few routes, one of which was a ride to <a href="http://www.china-travel-tour-guide.com/attractions/dianchi.shtml" target="_blank">Dian Chi Lake</a> a massive lake in the south of Kunming, which we decided upon.</p>
<p>We arrived at the lake after some 2 hours of cycling, mostly on the highway for the first hour, Dave got some Seagull sick dropped on his head so we decided to head to the park and get away from the flying sick and poop machines and have some quiet time. Lunch consisted of tuna mayo sandwiches, oranges, egg tart and a pastry desert filled with chocolate. We continued on around the park exploring and photographing which was great in the sunshine. After an hour or two of riding around we started to make our way back which takes around an hour.</p>
<p>The Unemployed Life stickers kept making an appearance around the hostel, as well as other destinations that we have visited, so we knew we were following in the foot steps of  fellow travellers Will and co who we had met previously in Xi&#8217;an.</p>
<p>We needed some supplies for making breakfast cheaper rather than buying hostel/restaurant food all the time. We found a local Walmart superstore and stocked up on cereals, fruit and veg, cans of tuna, noodles and a few cakes! The Walmart is located behind a multi-storey market so you need to walk through to the back of this and you cannot miss the Walmart sign! Afterwards we chilled out at Cloudland, ate some substandard food and packed ready for our trip to Dali the next day.</p>
