<p>The journey from Kratie to the border crossing was very smooth indeed. We chose the option of a mini-van ticket for $14 each, this picked us up at 8am along with a few other passengers and continued onto Stung Treng for an hour and a half where we were picking up the bigger bus to the border. We only had one hiccup in the form of a flat tyre which occurred due to a big wooden stake going right through it! This delayed us by 20 minutes or so but to our surprise and relief the bus was waiting for us on the highway and so on we hopped and off to the border we went.</p>
<p>It took a further 45 minutes to get to the border crossing at Trabaeng Kriel and around an hour to get through an leave on the other side. The main problem we encountered was the request for extra dollars on exit and entry sides, they say its for the admin, some say its for the stamp so we had an extra 4$ each to pay on top of our visa fee. The visa fee is another thing to mention here, we previously thought we needed to get our visas issued in Cambodia as had read that there were no crossings from Cambodia to Laos where you can get a visa on arrival. Whilst in Phnom Penh we spent $45 each on a Loas visa, however this border does now issue visas on arrival and we could have saved around $8 each, it&#8217;s not too much in the whole scale of things but a little premature on our part all the same.</p>
<p>So after a few bribes we sat on the bus for around half an hour before setting off to Ban Nakasang where we picked up a boat over to Don Det Island part of the <a href="http://en.wikipedia.org/wiki/Si_Phan_Don" target="_blank">4000 Islands</a>. All transfers and boat trips were included in the bus ticket from Kratie, even though they don&#8217;t write anything on the ticket it&#8217;s like an unspoken deal, money just goes from one driver to the next with the last person being the boat driver. It only took 20 minutes if that to get to Don Det and then we were in Laos at the 4000 Islands. We walked down the sunrise side to start with as we&#8217;d read that it is a good option in the Lonely Planet but already bungalows were getting busy and the one&#8217;s we liked the best we already full. We opted for a cheap 30,000 kip bungalow which was pretty basic, wood, a window, a mosquito net and a very hard bed, the river below had seen better days too, so we decided we&#8217;d do one night here and later on go on a search for somewhere more comfortable and a little more of what we had in mind. This didn&#8217;t take very long as we found a lovely group of turquoise painted bungalows next door to Mr B&#8217;s sunset bungalow resort. They were full that night so we endeavored to come back the next morning and see what we could get.</p>
<p>So with that in our minds we went for some cake at the Australian Bakery on the sunrise side and then walked around the perimeter of the Island taking in the sunset as we did. It&#8217;s not that big an Island and it&#8217;s very easily navigated by bikes, the paths are dry and sandy and you get good views along the way. We made it back to our guesthouse and proceeded to head out for dinner choosing the Mama Tanon Cafe for a relatively well priced meal.</p>
<p>The next day we went back over to our choice of accommodation and as we got there two girls were checking out of a bungalow looking right over the Mekong river, this would be perfect. We managed to reserve the room, went back to collect our bags and then moved into the new shack. This was much better, with two hammocks, the bungalow itself was detached with a private balcony, the bed was much more comfortable and the mosquito net less scanty. We decided we&#8217;d stay an extra 2 nights on Don Det.</p>
<p>We rented a bike for the day from the guesthouse at 8000kip for a days rental, we set off for Don Khon and were surprised by the 20,000 kip fee to cross over the bridge from one Island to the other. A tourist fee…the locals only have to pay 5,000 kip each. We cycled the route most traveled by tourists in the area and made our way to the Li Phi waterfalls having to pay a further parking fee for the bikes, the ticket to the Island does cover the cost of getting into the waterfall though. The falls are impressive even during the dry season however you cannot get that close to them, for safety reasons, but it would be nice to feel some watery fury. We stopped for some lunch, a rest from the sun and had ordered some fresh spring rolls with sticky rice as we were rather low on money. They tasted really good and we were both equally impressed.</p>
<p>After collecting the bikes from the makeshift car park we headed towards the beach. You can head towards an area where you can get a boat to go dolphin spotting or as we decided, ride to the end of the island and see what was there. A great view across of the Mekong greeted us. We rode back to Don Det and headed into the river for a cooling dip, swimming across to a sandbank island and then watch the sunset from our little bungalow. Evening meal was Indian cuisine at a cheap restaurant on the high street not far from the landing beach of the boats, make sure you are there before 6.30pm as it gets very busy and waiting times can be as long as 1.5hrs! The food was cheapish and fairly good value, portion sizes are modest with a good selection of naan breads.</p>

<p>We had a sleep in to recoup some energy from the past few days and then had some breakfast in the room and ordered some bread and jam from the restaurant downstairs. Our pickup mini bus arrived at Sweethome at 10am for our 10.45am bus journey to <a href="http://wikitravel.org/en/Battambang" target="_blank">Battambang</a>. The bus pulled up into the station and it looked pretty battered from the outside and the inside wasn&#8217;t much better. The vents were just open holes and the seat in front had no real back support so was almost in Dave&#8217;s lap. After a delayed start, we left 45mins late and headed off on our journey.</p>
<p>Upon arriving in Battambang we were hounded by the tuk-tuk drivers however as Battambang is quite small its easy to walk to where you want to go and not have to pay a few dollars for the privilege. We checked out a few hotels however they had limited rooms and were over $12 so we kept looking for something cheaper. We ended up at the <a href="http://www.chhayahotel.com/battambang.htm" target="_blank">Chhaya Hotel</a> which cost $5 a night for a twin, it was a decent size with a bathroom, looking and feeling a little cell like, but it did the trick. We continued with some more blog work and headed out for some food. The White Rose restaurant is in the Lonely Planet and we stumbled across it, their cheap menu has lots of choice and for a reasonable price. The fresh spring rolls were OK, lacking in flavour a little, the curry was a large portion with plenty of vegetables and Helen&#8217;s dish we think was something different to what she ordered but it was OK; the mixed fruit shake was a good call!</p>

<p>The 5th February was another day of exploration via the transport medium of bikes, we will surely have thighs of steel by the end of our trip. We headed along the river and found old villages around 2km out of Battambang itself, Wat Kor Village contains some of the oldest houses in Cambodia, some of which you can pay to have a little tour inside of, we just cycled by and took it all in. Dave&#8217;s bike suffered from a puncture after 4km which was treated by one of the many small repair shops that are on the side of the roads. They fixed the leaky valve for 500r and off we went, however within a few hundred meters the tyre was flat again so we decided to head back and get a new bike from the hotel. Frustrating to say the least. New bike selected and we started again, searching for the Bamboo Train which was tricky to find as the signs aren&#8217;t that frequent and the locals all told us or pointed us in the opposite directions to the last person we asked.</p>
<p>Upon searching for the train Dave&#8217;s second bike suffered from a fatal haemorrhage with the inner tube bursting through the front tyre! There was no quick fix for this and it would surely be pricey. Helen went ahead and Dave pushed his bike and finally we found the station for the &#8220;train&#8221;. $5 each on a bamboo fence panel, engine and two axles that held us onto the tracks. It was a good experience and is fun when you meet on coming traffic. If the oncoming <a href="http://en.wikipedia.org/wiki/Norry" target="_blank">bamboo train</a> has more people, weight (rice delivery etc) or multiple trains are coming through you have to jump off and the driver deconstructs the train within seconds. There are no bolts or clips to be undone, it all just fits together! We had to disembark 5 times, but that&#8217;s half the fun. The tracks are in terrible state, however apart from rattled bones, no injuries were sustained.</p>
<p>At the end of the tracks we stopped and were greeted by some local children and market stalls. The driver would not leave his hammock until we bought something from one of the vendors so with a drink purchased he hopped onto the train and off we went. We sorted out some tuk-tuk transport back into town with the bikes rammed in and only paid the hotel for hire of one of the bikes, which they agreed was fair. Relaxation time and sunset on the roof of the hotel and then for our evening meal we headed to the The Smokin&#8217; Pot restaurant and even though the portions appeared small, they were enough to satisfy. Lemon juice, curry and rice.</p>

<p>On the morning of the 8th we enjoyed a good breakfast from the Hotel including a choice of eggs, bread, fruit and juice. Afterwards we set off to research a few options for tours in the area. We had planned to do a tour to <a href="http://en.wikipedia.org/wiki/Ninh_B%C3%ACnh_Province" target="_blank">Ninh Binh</a> and <a href="http://www.lonelyplanet.com/vietnam/north-central-vietnam/tam-coc" target="_blank">Tam Coc</a> with Maayke and Paul so were shopping around the various fake <a href="http://sinhcafe.com/index.htm" target="_blank">Sinh Cafe</a>&#8216;s across the city to find out the best deals. They&#8217;d already sourced somewhere that would do the trip for $16 with bikes included for one part of the trip. After a while and battling through the many scooters we ended up back at the same place and booked the trip for the price they&#8217;d agreed. We&#8217;d arranged a part-payment trip in case there was anything we weren&#8217;t happy with; often you&#8217;ll find there are many cheap tours and you&#8217;ll never know which one is better than the other. We thought it would be a good day out of the city anyway so went along with this.</p>
<p>Afterwards we went off to do some more research into the other part of our trip interest: the <a href="http://www.halongbay-vietnam.com/" target="_blank">Halong Bay</a> tour. Helen had read up on a few more reputable companies offering slightly better value tours so we started with Ethnic travel who didn&#8217;t really have a very welcoming atmosphere and soon decided we wouldn&#8217;t be booking with them. We found Ocean tours around the corner who&#8217;s 3 day 2 night tour with one night on the Island in a bungalow to be the best on offer but still had a look around. In doing so we met Justin and Jules who were doing the same research as us, Dave stopped them as soon as they walked out of one of the other tour agencies and we started chatting about what information that have and so on. Before long we were enjoying lunch with them and went back to Ocean Tours to get a better feel for what they were offering.</p>
<p>After a few more drinks, a walk around the city into the French Quarter and then back to Ocean Tours we&#8217;d decided this was THE tour for us and we all booked it together! We knew that at $175 we were paying a lot more than many other tours on offer but decided that it sounded far better than some of the other less tailored trips and we liked the sound of staying in a bungalow for the night!!</p>
<p>So with that sorted we went back to our now hostel Gecko (we&#8217;d moved out that morning as we wanted to save some money by staying in a dorm and rendezvous had no more availability) met up with the others and went out for food to Koto, a restaurant in the south-west of the city which trains up street-kids and the homeless to be chefs and working in the kitchens. The food was very good indeed and it was packed so it was good to see the restaurant supported in this way.</p>
<p>On the 9th we were picked up at 8am for our day trip to Ninh Binh and Tam Coc. The weather had been pretty chilly since we&#8217;d arrived in Hanoi although we were acclimatised to this and to us it felt okay, but there was some rain forecast for the day so we took extra layers with us. Leaving Hanoi the bus stopped several times to pick up other people and groups on the tour and before long there were around 20 on the bus. It took around 2.5 hours to get to Ninh Binh with one stop and we spent a lot of this time chatting to Bekka and her husband from America who are now living in Beijing, we exchanged stories of China and it passed the time nicely.</p>
<p>Our first stop was at 2 temples, which held the first and second Emperors of Vietnam. A few people on the bus were a little annoyed as they&#8217;d been sold the bus ticket as bus fare to Ninh Binh and not a tour, they had to go to the temples first before being dropped off in Ninh Binh…be warned this happens quite a lot over here!</p>
<p>The temples were okay but we have seen many amazing shrines and temples over our time traveling, so it takes an amazing day with the weather and a spectacular site to impress us! Have we become Temple snobs…?</p>
<p>We were supposed to be cycling from the temple site to Tam Coc where the rest of the tour bus was traveling to for lunch. As it was raining and very windy we decided against this and joined the bus to go straight to the restaurant. It was a good job we did as it would have taken us much longer to reach the port than the tour allowed for and would probably have missed our lunch…to be fair though that wouldn&#8217;t have been such a bad thing. The vegetarian option for Helen and a few others was quite poor with the best thing on offer being a plate of chips for 7 to share. We mentioned this to the tour guide and he was very apologetic but it&#8217;s more down to the restaurant than him.</p>
<p>Following lunch we went over the road to the rowing boat tour and met the lady driver who took us out on her boat. She was quite agile often using her feet to row and we had a paddle each so we could both add some gusto to the pace. We passed under caves and one by one the boats traveled along the river. It&#8217;s supposed to be the land version of Halong Bay with many karst peaks engulfing the landscape. It was quite similar to what had surrounded us in Yangshou and we both felt Yangshou is a more impressive place.</p>
<p>The boat tour was good fun, and we even bought our guide a drink and snack which she shared with us, we had to bargain for this and the woman selling the goods on her own boat wouldn&#8217;t leave us alone until we did! We didn&#8217;t mind too much though as we felt our guide was doing a very good job indeed.</p>
<p>At the end of the tour we were pressured into giving a tip to our guide but we felt we&#8217;d already tipped her in buying her drinks and snacks along the way so made for a sharp exit to the bus. There were people selling souvenirs and market items along the pier front and some were selling dog meat. By now we have become used to seeing this sort of thing on sale, funny how you get used to customs so quickly but its always the topic of conversation when you first see it.</p>
<p>We had a small confrontation with our tour guide on the bus back to Hanoi. As we had monies outstanding to pay he was asking for us to complete the payment. We mentioned that we&#8217;d agreed a price including bike hire but as we didn&#8217;t use the bikes then we wanted to pay the price quoted to us excluding bike rental. He got quite angry about this and said we have to pay for the bikes as the restaurant paid for fuel to get them to the site for us to cycle, but we saw many bikes there so we felt this was not the case. We were happy to pay but just not for the whole fee and he didn&#8217;t say when we said we weren&#8217;t taking the bikes that we would still have to pay for their rental. He rang our tour company and Helen agreed a price over the phone which mean&#8217;t we paid some of the cost towards the bike but not all. Our chirpy tour guide was no longer quite so happy and he settled into a grump until the bus stopped to pick up his girlfriend.</p>
<p>Another lesson learned! Still we had managed to get back some of the money so it was good to know there are some principles in place. When we got back we ate at a great local restaurant and for a good price. We went back and packed ready for our Halong Bay trip leaving at 8am the next day.</p>

<p>We had a slow start to the new year, not a lot was done at all. Helen had quite a hangover for the first part of the morning but after a while and a re-hydration sachet she soon perked up. As the day went on we cuddled in the cafe and worked on editing and the blog. We had some good comfort food and went out for a little walk before heading into town to meet Emma and Doug for some local food. We ended up at a great cheap little clay pot restaurant away from West Street where you&#8217;ll find most backpackers eating away, you can eat a good meal for around £1. So having recovered from hangovers we swapped notes on our plans for South-East Asia and ended the night with a nice cup of chai.</p>
<p>We started the following day early with an hour or so of horse-riding accompanied by a local guide. The session was supposed to be an hour but Dave&#8217;s horse was a little slow so we ended up being on the horses for an hour and a half. Our guide couldn&#8217;t speak very good English so it was more about signaling and the odd whip to get the horses up to his pace. This was Dave&#8217;s first time on a horse, but they were pretty tame and we think the slow pace probably helped for the first-timers. Helen&#8217;s horse was well-behaved and just got on with it, trotting when instructed to and just followed his lead. The guide came along with 3 horses and met us at Trippers, he took the white horse which was the smallest and the most feisty so we were relieved that he was riding that one. It would have been nice to find out the names of the horses but we still managed to have a small bond! Our trip concluded by a little stop on a sandy beach where our guide proceeded to take a few photos of us with our new travel companions. It was a nice experience, perhaps a little pricey at £12 each, but we enjoyed it all the same.</p>
<p>We had planned to do some rock-climbing later on, but the weather came in and the temperature had dropped quite significantly so we decided to hire some bikes for the afternoon and make our way to <a href="http://www.guilinchina.net/yangshuo-travel/fuli_town.htm" target="_blank">Fuli</a>. Tripper had given us some good advice on a route to Fuli away from the busy roads, the first part of the route took us back to where we&#8217;d been with the horses earlier on and we made out way to a little taxi ferry so we could cross the river to get to the start of the path. There was a man cooking his lunch and he was ready to eat signaling to his stomach, we tried to communicate that we didn&#8217;t mind waiting for him to eat but he left it cooking and took us over the river with our bikes. When we got to the other side we found the path straight away and set off on another biking adventure. Our target was Fuli and we had a map showing various paths and villages for us to go through. It definitely helped us to get warm and it was great riding along the bumpy trials. We&#8217;ve really enjoyed hiring bikes in China as it has always given us the best platform through which to explore in our own time. Most of the villages are very tranquil and it&#8217;s always great to see the culture of each place, seeing how people live with so little in contrast to the western world.</p>
<p>After some time we passed through orangeries and ended up on the road to Fuli. When we arrived there wasn&#8217;t really that much to see but we did stop for some lunch and meandered through the town&#8217;s streets until we came to the <a href="http://en.wikipedia.org/wiki/Yangshuo_County" target="_blank">Li River</a>. We were told we could pretty much cycle the length of the river back to Yangshou without going back onto the main road, this was the case for most of the journey and it was really good biking along the paths and through more villages, past more farmland and so on. After a while though our path led us back onto the main road and so we stuck with this until we got back into Yangshou.</p>
<p>We hadn&#8217;t much planned for the evening other than more work on Notworkrelated and some more good Trippers food. We&#8217;d already sampled the apple crumble which was delicious so we were looking forward to another relaxing evening. Most of the south of China comes without heating so it&#8217;s always good when we have the sun during the day, here though the weather was getting colder but we didn&#8217;t mind so much as Yangshou is a really pretty place and we were enjoying staying at Trippers so we decided to stay for a few more nights. That night we stayed in the cafe until quite late and as we were the only ones there asked if we could set up the laptop to watch another episode of Misfits. Addicted some might say!! We still made it to bed by 10.30pm though so we didn&#8217;t keep the staff up too late!</p>

<p>We packed up and were ready to check out at around 11am. We&#8217;d read that we could leave our bags in luggage storage at the <a href="http://en.wikipedia.org/wiki/MTR" target="_blank">MTR</a> station at Kowloon&#8217;s Hung Hom so that we could make the most of having some more time in Hong-Kong. Getting there is fairly easy on the metro with a few stops and walking distance. There is a little problem in that when you buy a through ticket to Hung Hom from Causeway Bay you&#8217;ll have to go through an unpaid walking zone to reach the connection to the western line. You wont find this out though until you&#8217;re ready to change lines at Tsim Shu Tsha and the machine takes your ticket and you have to buy another one way to Hung Hom!! We tried to explain that we didn&#8217;t know about this but they didn&#8217;t really want to know and told us we would need to buy another ticket to get there!! So we lost some more dollars on this and gritted our teeth in fury! Well Helen did but the moment soon passed and we found ourselves at Hung Hom with a decent one off fee of 20 HKD per bag for the day which isn&#8217;t too bad.</p>
<p>We walked across to the main strip in Kowloon via the Hollywood stars walk along the sea front. It was good to have clear views across to Hong-Kong Island and we enjoyed this along with several other tourists. The sun was out and it was very pleasant indeed. As we wandered through the streets and endless shopping malls we found ourselves a good little knife shop and bought us a wee Christmas gift in the form of a Swiss army pen knife. Sad but these things do make your lives a little easier when traveling and having those practical items to hand. It didn&#8217;t stretch the budget too much either which was a nice bonus.</p>
<p>After the excitement of buying our little present we went on the search for some food before our over night bus journey. We found a street that had a mix of establishments and chose Red Ant, which appeared to have some nice rice, noodle and soup dishes. The food was average with Helens particularly bland. Not what you expect really but it did the job. Afterwards we made our way back to Hung Hom station, collected the bags and went for the next train to Shenzen. It&#8217;s a much cheaper method of getting to and from Hong Kong than using the Kowloon express from Guangzhou. For 33 HKD each we got the MTR to the furthest stop on the line Lo Wu, from here it was clearly signposted to get to Shenzen and the bus station, there are exit and entry points from Hong Kong to back into China and the whole process took around an hour and a half from leaving Hung Hom. When we arrived at the bus station we had another hours wait, so we proceeded to play some more card games. We thought we&#8217;d lost our other pack and managed to pick up a new pack of cards for around 20p! Bargain! The bus left at 7.30pm and we were pleasantly surprised to see that the bus wasn&#8217;t as bad as the reports we&#8217;d heard and also seen on the roads. We didn&#8217;t realise but this was the luxury bus and not the cheaper 3 tier sleeper option. The bedding was clean and fresh on and it was only a two tier bunk bed layout with only a handful of people on there. You need to use the seat belts as you&#8217;ll get jerked around quite a bit and there were a few stops coming out of Shenzen before we were well on our way.</p>
<p>Our destination was <a href="http://en.wikipedia.org/wiki/Guilin" target="_blank">Guilin</a> and we were told the bus would get in at around 6am, but we were way ahead of time and arrived at 4.15am. Luckily the station was very much anticipating the arrival of the buses so we weren&#8217;t alone at the drop off. It was a little confusing but we walked out of the station, found ourselves a taxi driver who knew where we were going and landed at the <a href="http://www.wada-hostel.com/" target="_blank">Wada hostel</a> at around 5am. The hostel was all locked up and in the dark but eventually someone came out to let us in, fortunately the room was available and she checked us in at no additional cost. This is one thing that we&#8217;ve found to be really helpful in China, you can arrive at pretty much any time of the day/night and get into your room as long as the date is the same as your check in date then there&#8217;s no extra charges for getting your room early. So we were able to get some sleep and set the alarm for 10am.</p>

<p>We&#8217;ve opted for some sightseeing and thrown ourselves headfirst into the height of Beijing&#8217;s tourist center; <a href="http://en.wikipedia.org/wiki/Forbidden_City" target="_blank">The Forbidden City</a>. Helen came here many years ago on a hot summers day. On this day the sun shone and the sky was blue, but it was very cold. Along with panda hat wearing locals, westerners and street vendors we approached the Forbidden City through the front gates passing under Mao&#8217;s portrait and through to the grounds. It&#8217;s a massive site built up of several temples, shrines, gardens, halls and statues that were home to the Qing and Ming dynasties many moons ago. It&#8217;s a must do in the whole scale of things to do when you visit China. However Dave was expecting a little more!! It is quite tired and the money coming in from the thousands of visitors every day doesn&#8217;t appear to be going into the upkeep of the site. However given this it&#8217;s still very impressive and is also host to a 4 star toilet facility! Well surely this is enough to go on it&#8217;s own merit!!</p>
<p>You can easily spend a day here as there are so many routes within the city, gardens and museums to explore. We opted for a long morning. The colours of the brickwork and walls within the Forbidden City are beautiful and we loved the textures that exist within this environment. Later that evening we ate at The Korean Bistro on <a href="http://www.beijing-visitor.com/index.php?cID=416&amp;pID=1094" target="_blank">Nanluoguxiang</a>, a tourist Hutong area that has a mixture of western and Chinese food, gift shops and bars.</p>
<p>The following day we went on our first of two trips booked with the <a href="http://www.chinaculturecenter.org/" target="_blank">CCC</a>. This one was for the Great Wall of China and we were going to an area of the wall that isn&#8217;t walked often, has no tourist traps  and was around an hour and a half away from the city. It was lovely to get out of the city and the weather was again perfect from a photography point of view, although it was bitterly cold in the wind. Our local tour guide is from the village where we started the walk and he along with others from his family had helped to re-build parts of the wall so that people can hike in the area. He had even carried a table to a watch-mans tower so that we could stop there for lunch. We had a lovely group including Trisha and her two children from Portland, Joyce from NYC and Becca from England, our tour guide from the CCC Andy spoke excellent English and had great knowledge about the hike. Both he and the tour co-ordinator Michael were very dedicated in carrying hot water, coffee and snacks all the way. As you can see by the photographs the scenery is quite mystical with a very hazy layer on the horizon. We really enjoyed the walk and were breathtaken by the Great Wall itself.</p>
<p>As we got back down we were invited into the home of our local tour guide. We sat in their living room drinking tea and chatting away, it was a lovely finish to a great walk. When we got back to the CCC we were invited back to Joyce&#8217;s for beer and popcorn, Dave, Becca and myself took her up on the offer and before long we were sat in her serviced apartment in Sanlitun. We discovered Joyce is an author of 30+ books!! This is someone who has sheer dedication and is an inspiration to us all. We met up with Trisha minus the kids and went to a very local chinese fast food restaurant for noodles and chinese burgers. We ended the night with a hot chocolate at The Bookworm.</p>
<p>On sunday we went to a charity Christmas gift event at the Canadian International School of Beijing, we bought a few Christmas gifts and soon found ourselves back at The Bookworm using their free wi-fi. This was followed by a spot of shopping before we made our way back to the CCC for their noodle and dumpling making class. This was taught to us by a local professional Chinese chef who specialises in Chinese pastry. We made our dough for the dumplings, left it to rise and in the meantime we had a go at stretching and pulling the dough used for noodle making. This was loads of fun and many people ended up with theirs on the floor as the dough stretched too far. There is a real knack to this and it does take many years to perfect so one lesson wont do much!! For the dumplings there was a meat and veggie option for the filling. The meat is pork and vegetable and the veggie option is egg and spinach. We rolled out our dough, chopped it, flattened it out and then filled it with a little of the stuffing. After this you close the dough in and around the mixture and then make a nice pattern with the dough. We hope that the photos describe it better. Once they were ready they were boiled and then we ate them with a soy dip. They were okay! I&#8217;m sure next time they&#8217;ll be loads better!! Only a few people got to make the actual noodles but we didn&#8217;t cook them so it was more of a demonstration. It was a pretty cool little event, although it would be good to learn how to make the mixture ourselves rather than having it ready to go. We also met Jen from <a href="http://www.tinyurbankitchen.com/" target="_blank">Tinyurbankitchen</a> who is traveling with her husband and writing a food blog.</p>

<p>So the day has arrived to leave Japan and it&#8217;s time to live a cheaper life in China. We got up early and packed our bags. The boat was scheduled to leave Kobe at around 11am but we needed to check in before 10am. We ate breakfast in the Hostel 64 room and then headed off to the subway to catch a train to Kobe port. This involved a change onto a kind of monorail which took us to the port destination. We proceeded to head for check-in which involved a laser light shone onto your forehead, checking for any high fever symptoms. We passed with flying colours, paid for our one way ticket which cost 30,000 Yen, £300 (inc fuel surcharge) each for a twin room (special 1st class!) as we wanted to keep the gear with us as safe as possible and then we spotted a couple of Western faces.</p>
<p>We got chatting to <a href="http://www.travelpod.com/travel-blog/trainsnotplanes/1/tpod.html" target="_blank">Rick and Beth</a> traveling from the UK and who are writing their own travel blog and then we boarded the <a href="http://ferry2japan.com/en/index.html" target="_blank">Yanjing ferry</a> to Tianjin together. The room was damn good and very spacious compared to some of the other rooms we have stayed in. En-suite with a shower and toilet which was ok, put it this way it was better to have this than the shared facilities, which were not that pleasant. You can stay cheaper in a mixed dorm of 12 or 16 people if you want to. We headed for an explore of our new home for the next few days. It takes just over two and a half days to reach China so we headed off around the ship with cameras in hand.</p>
<p>The highlight was a room in the depth of the boat with two table tennis tables. The gymnasium sign made us laugh, a storage room for carpets and knackered video game machines would have been more accurate. There appeared to be plenty of photography opportunities around the boat, the views on top promised to be very good and the other passengers just loved having there photos taken on deck, it felt like something out of a Carry On film. With blue sky and calm seas we headed off and as we left Kobe the sun shone brightly and the sea was very calm, it was a pretty cool experience.</p>
<p>We bought some food bits and bobs from the 7/11 for the trip and had some Japanese Yen, this is the only currency that they accept on board, however we quickly realised that we didn&#8217;t really have that much food, so a trip to the on board restaurant would have to be undertaken at some point. We found out from the literature that the breakfast was included in the price of the ticket so at least that was something. Pot Noodle style food from Japan is surprisingly good so this was our lunch on the first day.</p>
<p>We were called on deck for a drill in emergency evacuation, there we all stood in life jackets whilst the wind blasted our faces. The Brits had our own instruction which lasted half the time of the Chinese instructions, not sure what we missed there!? We were 2 of 96 passengers in total on board and found out there are 46 staff, it&#8217;s a funny staff to passenger ratio and made us giggle. There is the capacity to have 396 passengers in total on board and we couldn&#8217;t work out where they would all be if this was the case as the boat was feeling pretty full at this capacity.</p>
<p>On board we caught up with Rick and Beth and played cards into the evening and as the sun was starting to set we went up onto the top deck for superb views across the sea. We&#8217;re not entirely sure of our exact location at this point but it was the south Japanese coastline, the sunset was breathtaking and mesmerizing, the sea was extremely calm and we met our other western traveler JP from France. There was some evening entertainment planned, we were told it would start at 9pm but something that we eventually learned on this trip was that most things started half an hour before they let us know. We heard the singing, cheers and various performances downstairs whilst playing cards, so eventually we made our way down to join in the fun. It was a karaoke event with interludes of the ferry staff performing with musical instruments or singing. The audience cheered loudly and got behind their friends in the karaoke, it was a pretty raucous event for ferry entertainment. We we baffled by it all and carried on with a few more card games before heading to bed.</p>
<p>We decided to listen to some <a href="http://www.bbc.co.uk/programmes/b00876k2" target="_blank">Adam and Joe</a> podcasts that we&#8217;ve got with us on our travels before getting off to sleep. Anyone who knows us well will appreciate our love for Adam and Joe, and it kept us feeling all at home in our little cabin up in special first class…ha ha…we did feel a little too privileged.</p>
