<p>Through <a href="http://www.nirwahomestay.com/" target="_blank">Nirwa Homestay</a> we found out about a cooking class ran by one of their close friends, the <a href="http://www.payukbali.com/" target="_blank">Payuk Bali</a> restaurant which seemed like a good option for us. We were picked up after breakfast at around 8.30am. From the start we knew we were going to be having a really good laugh, the owner was very funny and we he understood us well.</p>
<p><img class="alignleft size-thumbnail wp-image-9292" title="notworkrelated_bali_ubud_37" src="http://www.notworkrelated.co.uk/wp-content/uploads/2012/03/notworkrelated_bali_ubud_37-188x188.jpg" alt="" width="188" height="188" />Our first stop was the local market in his home village, he took us around the various market stalls showing us the different vegetables, herbs, spices and fruit that are all grown throughout Bali. It was a pretty dirty market and very local which was a nice change from the busy tourist markets in Ubud. The stall owners again were really accommodating and happy for us to be there, we were the only westerners in the area which again was a nice change.</p>
<p>He&#8217;d already picked up the vegetables fresh that morning at 4am and so there was no need for us to pick anything up they just wanted to show us around. Our next stop was a pleasant surprise he took us into the elementary school in the village, the same school that he attended when he was a child. It was lovely to be there and to interact with the children&#8217;s plus it was no problem for the teachers for us to be there looking around. He then explained about the rice that grows in Ubud, the main crops and how the community help to harvest the rice together for no payment other than a portion of the rice crop.</p>
<p><img class="alignright size-thumbnail wp-image-9297" title="notworkrelated_bali_ubud_42" src="http://www.notworkrelated.co.uk/wp-content/uploads/2012/03/notworkrelated_bali_ubud_42-188x188.jpg" alt="" width="188" height="188" />When we arrived at his family home compound he explained to us about the family temple, why they do offerings and we also learned that due to the relaxed life of the Balinese his grandmother was still alive at 111! It wasn&#8217;t her who helped Helen with the making of her offerings perhaps his mother but it was really nice to take the time to make the traditional offerings together and she even planted a few Indonesian flowers in Helen&#8217;s hair.</p>
<p>We watched a display of coco-nut oil being reduced down for the production of their weekly cooking oil and we also learned about the roasting of Bali coffee following this with a cup of the freshly ground stuff and some deliciously fried bananas in palm sugar honey. This was enjoyed at the back of the family compound where they have a stunning location for a restaurant with an open kitchen, this is where we would be learning to cook.</p>
<p><img class="alignnone size-large wp-image-9304" title="notworkrelated_bali_ubud_49" src="http://www.notworkrelated.co.uk/wp-content/uploads/2012/03/notworkrelated_bali_ubud_49-494x328.jpg" alt="" width="494" height="328" />Here&#8217;s what we learned to cook:</p>
<ul>
<li><strong>Base Gede</strong> &#8211; the multi-purpose spice made into a paste from ingredients such as ginger, galangal, turmeric, chilli, garlic, shallot, nutmeg, lemongrass and so on. The list of ingredients for this paste is long. We had to grind it all together using a motor and pestle.</li>
</ul>
<ul>
<li><strong>Sup Timun</strong> &#8211; or cucumber soup as we would know it, including black eyed peas, red beans and coconut milk along with the main base gede paste.</li>
</ul>
<ul>
<li><strong>Nasi Kunung</strong> (yellow rice) The method of making yellow rice using coconut cream, lime and bay leaves and the base gede. We were particularly drawn to their original-looking rice cooker/steamer.</li>
</ul>
<ul>
<li><strong>Gado Gado</strong> &#8211; one of the all time traditional Indonesian dishes, a vegetable salad with peanut sauce. The vegetables are all blanched in preparation for the salad and served with a boiled egg plus tempe fried in coconut oil. The peanut sauce was a little like making the paste but with pre-fried peanuts, garlic, shallot, aromatic ginger, brown sugar, fresh lime and chilli.</li>
</ul>
<ul>
<li><strong>Sate Lilit</strong> &#8211; minced fish on a skewer. We see this all the time on the street stalls, fish satay as we may know them to be called. We had to really mince the fish using a large scale mortar and pestle and long piece of coffee tree branch. By hand the tuna fish was mixed in together with the base geed, an egg, lime juice, fried shallot, palm sugar and coconut milk. We then cooked them lightly on the barbecue. They were better tasting when first cooked.</li>
</ul>
<ul>
<li><strong>Pasen be Pasih / Pepes Ikan</strong> (grilled fish in banana leaf) Again with tuna fish, base geed, bay leaves and 1 tomatoe, the mixture was bound together and steam cooked in banana leaves.</li>
</ul>

<p>We also cooked a Balinese style chicken dish which was perhaps our favourite of them all, and a sweet desert in the form of braised banana in palm sugar sauce. All the dishes were cooked collectively so we would each have a part in the final piece. We could taste the flavours along the way and decide whether more salt should be added and so on. And at the end we were more than happy to sit in their restaurant overlooking the tropical jungle and enjoying the fine food.</p>
<p><img class="alignright size-medium wp-image-9319" title="notworkrelated_bali_ubud_64" src="http://www.notworkrelated.co.uk/wp-content/uploads/2012/03/notworkrelated_bali_ubud_64-191x288.jpg" alt="" width="191" height="288" />The only other thing left to complete our cultural experience in Ubud for us was to go and watch a traditional Balinese dance. We didn&#8217;t have to look very far as our home stay hosts recommended that we go to the fire dance taking place at the temple next door. It cost 80,000 IDR each per ticket and without going into too much detail we thoroughly enjoyed it. From having seen bits of the show at the Royal Palace, this show was much less of a grand affair and the main soundtrack was provided by a large group of men all acting as monkeys in the story.</p>
<p>As with all of these things there is a plot and a romance and death, a little like their own version of Romeo and Juliet. It was very well done though and at the end of the performance there was a trance dance using piping hot coconut shavings for the performer to kick through and dance within. It was totally bizarre and like nothing we had seen before. It was way better than we thought it was going to be.</p>

<p>We hope you enjoyed attempting some of the previous recipes from our <a href="http://www.notworkrelated.co.uk/2011/06/review-and-receipes-from-our-yangshou-cooking-school-experience/" target="_blank">Yangshou Cooking experience</a>, so following on from this we&#8217;ve decided to tempt you even further with another review of our second favourite cooking course undertaken whilst travelling in Asia.</p>
<p>Helen had previously experienced a Chiang Mai cookery school programme when visiting Thailand back in 2004. Her experience then was good and gave her a real taste for Thai food and cooking, she did find it very inspirational indeed. This time around, Dave having never visited Thailand before was keen to do a cooking class and Helen wanted to have another go too! This time though we were looking for a class that offered something different from the everyday schools in Chiang Mai, and we came across the <a href="http://www.thaifarmcooking.net/home/" target="_blank">Thai Farm Cooking School</a>.</p>
<p><img class="aligncenter size-large wp-image-5034" title="notworkrelated chiang mai cooking school 22" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/04/notworkrelated-chiang-mai-cooking-school-22-494x328.jpg" alt="" width="494" height="328" />We chose this particular school because it is located around 17km outside of Chiang Mai on a beautiful farm where they grow their own vegetables, herbs and organic fresh ingredients to cook with. They have two kitchens prepared for groups to cook aswell as a lovely outside eating area. Go to their website and take a look for yourself!!</p>
<p><img class="alignright size-thumbnail wp-image-5037" title="notworkrelated chiang mai cooking school 25" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/04/notworkrelated-chiang-mai-cooking-school-25-188x188.jpg" alt="" width="188" height="188" />Our guide and chef Tommy had a good sense of humour and for his age was a very well accomplished chef and teacher. We chose a curry paste from a choice of red, green or yellow, we also picked a soup dish, a noodle dish and a dessert. There were 3 different dishes to choose from in each section so the choices were good.</p>
<p>We chose to cook different dishes so we could taste each others food. Like the Yangshou Cooking School we each had our own prep and cooking station and Tommy would demonstrate a dish and we would follow by cooking it, he gave us many tips on spice, sauces and flavour. Too much spice would equal sexy lips!!</p>
<p><img class="alignnone size-large wp-image-5029" title="notworkrelated chiang mai cooking school 17" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/04/notworkrelated-chiang-mai-cooking-school-17-494x328.jpg" alt="" width="494" height="328" />We both love Thai food so this was never going to be a let down for us! But it was a great day, starting off with a market tour going through the ingredients used in Thai cooking and when we arrived at the farm we had a garden tour taking us through their organic vegetable patches.</p>
<p><img class="alignleft size-thumbnail wp-image-5036" title="notworkrelated chiang mai cooking school 24" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/04/notworkrelated-chiang-mai-cooking-school-24-188x188.jpg" alt="" width="188" height="188" />We made our own curry pastes &#8211; Dave chose a red curry and Helen a yellow one. We cooked a noodle dish each and whilst Helen cooked the hot and sour Tom yam soup Dave cooked a chicken Tom Kaa Gai.  As there was ingredients left over for the spring rolls we even got to make a few of those too!  What we couldn&#8217;t eat we took away with us for dinner later on!</p>
<p>This wasn&#8217;t the cheapest option of doing a cooking class in Chiang Mai as this is sighted as one of the top activities to do in the area, but it was pretty good value for money and we enjoyed the location, the chef and our tour group were all lovely too!</p>
<p><img class="alignright size-thumbnail wp-image-5039" title="notworkrelated chiang mai cooking school 27" src="http://www.notworkrelated.co.uk/wp-content/uploads/2011/04/notworkrelated-chiang-mai-cooking-school-27-188x188.jpg" alt="" width="188" height="188" />For a full day class we paid 1850 Thai Baht each, which is considerably more than the 1000 baht offering on their website. This works out to be around £35, which when compared to the Yangshou cooking school is a hell of a lot more!! Cost of travelling in Thailand however is considerably more than China, so for those of you on a budget there may be other cooking schools in Chiang Mai that are more appealing!</p>
<p>So for your pleasure we have a few recipes below, let us know if you try them!</p>
<blockquote><p>Yellow Curry with Chicken / Tofu for vegetarian option &#8211; serves 2</p></blockquote>

<blockquote><p>Curry paste:</p></blockquote>
<p>3 red dried chilles (soak in cold water for 15 minutes before use)<br />
1 tbsp of chopped shallots<br />
1tsp of chopped galangal *<br />
1 tbsp of chopped lemongrass<br />
2 cloves chopped garlic<br />
1/4 tsp roasted cumin seeds<br />
1/4 tsp roasted coriander seeds<br />
1 tsp chopped tumeric<br />
1 tsp yellow curry powder<br />
1 tsp chopped ginger</p>
<blockquote><p>Other ingredients:</p></blockquote>
<p>70 grams of sliced chicken / Tofu (vegetarian)<br />
1 cup of coconut milk<br />
1.5 cup of water<br />
1 cup chopped potatoes<br />
1/3 cup of sliced onions<br />
1 stem of spring onion<br />
1 tbsp of fish sauce or soy sauce<br />
1 tsp of sugar<br />
1/4 tsp of salt</p>
<blockquote><p>For the curry paste:</p></blockquote>
<p>Put the ingredients for the curry paste in the mortar. Pound with the pestle until everything is mixed and ground thoroughly.</p>
<blockquote><p>(we were doing this for at least 10 minutes!)</p></blockquote>
<p>For the curry:<br />
Put half cup of coconut milk in a pot and heat until boiling. Add chicken or tofu and curry paste. Stir until almost done. Add water, onions, potatoes and the rest of the coconut milk. When the potatoes are soft season with fish sauce or soy sauce, sugar and salt. Add spring onions. Serve with rice.</p>
<p>You can try different vegetables with this curry, we&#8217;ve tried butternut squash, sweet potatoe and courgettes, anything that will absorb the spices and flavour nicely will work. A little hint with the rice &#8211; we love to add coconut cream, cardamon and star anise to add some aromatic flavours.</p>
<p>* you can pick up dried Galangal from alternative supermarkets such as asian, chinese or organic.</p>
<blockquote><p>Fried Noodles &#8211; Pad Thai</p></blockquote>

This has to be one of those dishes everyone loves from Thailand! It&#8217;s always first on the list when we arrive! There are prawns in this photograph but the recipe below is vegetarian with tofu &#8211; if you want to add prawns then feel free to do so!</p>
<blockquote><p>Ingredients &#8211; Serves 2</p></blockquote>
<p>80 grams rice noodles<br />
1 cup of bean sprouts<br />
2 tbsp of tofu, cut into small pieces<br />
1 egg<br />
1 tbsp of chopped pickled white raddish<br />
1 tbsp of crushed roasted peanuts<br />
1/3 cup of ripe tamarind juice (or 2 tsp of white vinegar mixed with 3 tbsp of water)<br />
1.5 tsp of sugar<br />
1 tsp fish sauce or soya sauce<br />
1 tsp of chopped Chinese leek or spring onion<br />
1 tsp of dried shrimps<br />
a pinch of chilli powder<br />
3 tbsp of oil<br />
a pinch of salt<br />
3 cloves crushed garlic</p>
<p><span><span style="font-size: x-small;"><span style="font-size: small;">Heat up the oil in the wok on medium heat.  Place tofu and fry until crunchy. Then turn the heat down to low. Add  garlic, pickled raddish, (dried or fresh shrimps optional), chilli powder and stir until  fragrant. Add tamarind juice (or vinegar ) and noodles and turn the heat  up to medium. Stir fry until the noodles are soft. Turn the heat down  to low. Make place by moving the noodles to another side of the wok. Add  the egg and scramble. Add fish sauce, sugar, salt, crushed peanuts,  bean sprouts and Chinese leek and turn the heat up to high. Stir fry  thoroughly until well mixed. Serve with a piece of lemon and fresh  salad.</span></span></span></p>
<p>Something for the sweet toothed!</p>
<blockquote><p>Mango with sticky rice &#8211; YUM!!!<br />
Serves 1-2 so double your ingredients for this one!</p></blockquote>

1 cup of steamed sticky rice *<br />
1/2 cup of coconut cream<br />
1 ripe mango (peel, remove seed and slice)<br />
1-2 tbsp of sugar<br />
1/4 tsp salt</p>
<p>Put the coconut cream, sugar and salt in a pot. Heat until boiling. Turn the heat off. Add steamed sticky rice. Mix well together and let to cool. Serve with mango.</p>
<p>You can buy this dish on the streets as we did one day on our way to the train station. It&#8217;s a very sweet tasting dish but works so well with the mango.</p>
<p>* You can buy sticky rice online or at Asian and Chinese supermarkets. The best tips for steaming sticky rice is to soak it first in cold water for a minimum of 4 hours or even overnight. Afterwards wash the rice with fresh water at least two times. Put the sticky rice in a steamer and steam for about 30 minutes until the rice is sticky and soft. When the rice is cooked always keep it in a closed container to prevent it from drying out and becoming hard. If the rice cools you can always steam it again.</p>
<p>Ever so the relaxed Thai ways we love how ingredients are measured out in cups, and the old fashioned tablespoon measures! Cook things for about this or about that! Ha! but seriously the food will taste amazing! Let us know if you attempt to try any of these dishes and if you&#8217;re feeling brave you could share your photos online!</p>

<p>Today we gave up on the idea of yet more bike riding misfortune and  decided to use our legs. After an early morning run around Battambang  and some breakfast we headed out to look at the french influenced  buildings around the town and stop by at more temples. In the afternoon  we headed out to the train tracks once more but this time to the  abandoned railway tracks. Children playing in the wasteland that was  once a French operated train yard, which is now home to people living on  the perimeter of the town and is a dumping ground for their rubbish. We  headed back towards the hotel with cameras poised. Toyota must have a  huge market share in Cambodia, almost every car you see is a <a href="http://en.wikipedia.org/wiki/Toyota_Camry" target="_blank">Toyota  Camry</a>, they love the Camry! More work time on the roof and a few drinks  before heading off to the White Rose again for some cheap food, one  vegetable and one fish Khmer curry.</p>

<p>We had a sleep in to recoup some energy from the past few days and then had some breakfast in the room and ordered some bread and jam from the restaurant downstairs. Our pickup mini bus arrived at Sweethome at 10am for our 10.45am bus journey to <a href="http://wikitravel.org/en/Battambang" target="_blank">Battambang</a>. The bus pulled up into the station and it looked pretty battered from the outside and the inside wasn&#8217;t much better. The vents were just open holes and the seat in front had no real back support so was almost in Dave&#8217;s lap. After a delayed start, we left 45mins late and headed off on our journey.</p>
<p>Upon arriving in Battambang we were hounded by the tuk-tuk drivers however as Battambang is quite small its easy to walk to where you want to go and not have to pay a few dollars for the privilege. We checked out a few hotels however they had limited rooms and were over $12 so we kept looking for something cheaper. We ended up at the <a href="http://www.chhayahotel.com/battambang.htm" target="_blank">Chhaya Hotel</a> which cost $5 a night for a twin, it was a decent size with a bathroom, looking and feeling a little cell like, but it did the trick. We continued with some more blog work and headed out for some food. The White Rose restaurant is in the Lonely Planet and we stumbled across it, their cheap menu has lots of choice and for a reasonable price. The fresh spring rolls were OK, lacking in flavour a little, the curry was a large portion with plenty of vegetables and Helen&#8217;s dish we think was something different to what she ordered but it was OK; the mixed fruit shake was a good call!</p>

<p>The 5th February was another day of exploration via the transport medium of bikes, we will surely have thighs of steel by the end of our trip. We headed along the river and found old villages around 2km out of Battambang itself, Wat Kor Village contains some of the oldest houses in Cambodia, some of which you can pay to have a little tour inside of, we just cycled by and took it all in. Dave&#8217;s bike suffered from a puncture after 4km which was treated by one of the many small repair shops that are on the side of the roads. They fixed the leaky valve for 500r and off we went, however within a few hundred meters the tyre was flat again so we decided to head back and get a new bike from the hotel. Frustrating to say the least. New bike selected and we started again, searching for the Bamboo Train which was tricky to find as the signs aren&#8217;t that frequent and the locals all told us or pointed us in the opposite directions to the last person we asked.</p>
<p>Upon searching for the train Dave&#8217;s second bike suffered from a fatal haemorrhage with the inner tube bursting through the front tyre! There was no quick fix for this and it would surely be pricey. Helen went ahead and Dave pushed his bike and finally we found the station for the &#8220;train&#8221;. $5 each on a bamboo fence panel, engine and two axles that held us onto the tracks. It was a good experience and is fun when you meet on coming traffic. If the oncoming <a href="http://en.wikipedia.org/wiki/Norry" target="_blank">bamboo train</a> has more people, weight (rice delivery etc) or multiple trains are coming through you have to jump off and the driver deconstructs the train within seconds. There are no bolts or clips to be undone, it all just fits together! We had to disembark 5 times, but that&#8217;s half the fun. The tracks are in terrible state, however apart from rattled bones, no injuries were sustained.</p>
<p>At the end of the tracks we stopped and were greeted by some local children and market stalls. The driver would not leave his hammock until we bought something from one of the vendors so with a drink purchased he hopped onto the train and off we went. We sorted out some tuk-tuk transport back into town with the bikes rammed in and only paid the hotel for hire of one of the bikes, which they agreed was fair. Relaxation time and sunset on the roof of the hotel and then for our evening meal we headed to the The Smokin&#8217; Pot restaurant and even though the portions appeared small, they were enough to satisfy. Lemon juice, curry and rice.</p>

<p>We got up just after 6, packed and made our way to the bus stop in Koh Kong, this time we were able to pick up the bus at the starting point on street 3 next to the roundabout, it then went onto the bus station to pick up more passengers. The journey back to Phnom Penh was painfully slow and took around 6-7 hours, with the bus driver stopping many times along the way. We were relieved to finally get to the city and only paid $2 for the tuk-tuk to <a href="http://www.hostelworld.com/hosteldetails.php/Sweet-Home-Guest-House/Phnom-Penh/44114">Sweethome</a>, that&#8217;s more like it! Plus it was TET so the drivers were happy to have some income.</p>
<p>Our passports and visas for Laos were ready and waiting for us when we got to the guesthouse, we ended up paying $45 each for a 3 day service, knowing that we could have got it cheaper ourselves if we&#8217;d gone to the embassy directly but during TET and over the weekends you can&#8217;t get in so it meant we could use the time to go somewhere else. On the way back though Helen read that you can now get a visa on arrival at the crossing over to the 4000 Islands area for around $36…damn-it!! Still we had them sorted, but if you&#8217;re passing through that border you can now get visas on arrival.</p>
<p>Later on we walked around the city and saw more families, monks and tourists gathering together outside the <a href="http://en.wikipedia.org/wiki/Royal_Palace,_Phnom_Penh">Royal Palace</a>, we both agreed it was really nice to see everyone coming together, taking time out from their busy working lives and enjoy themselves as a family. We walked round to another guesthouse to meet Emma and Doug who we&#8217;d previously met at the New Years bash in Yangshou. We caught up and discussed plans for the <a href="http://www.malaysiangp.com.my/">Malaysian Grand Prix</a>. A few nights earlier we&#8217;d bough our tickets and booked accommodation… Sepang F1 here we come!</p>

<p>People in this part of the world get up early, so you get up early too. We awoke at 6am and decided to watch the sunrise from our floating house looking out across the water. The sunlight colour and luminance changes so fast that its a photographers dream to be somewhere so unique and interesting. Breakfast was provided by our guests and we happily ate yet more fried eggs, bread, jams and fruit which would set us up nicely for another day of boat travel and beach time. This time we headed back on ourselves from the following day and docked at beach 6 which was again very isolated and offered the chance of some snorkeling action. The water was relatively clean, not crystal by any means, and there were a few fish around the rocks which made it interesting. After all feeling the power of the sun on our skin yesterday we had a slightly more sheltered day under the trees on the beach front when not swimming or exploring the beach.</p>
<p>Lunch was again provided by our guide and the boat driver which was amazing again. We think they had learnt that we eat quickly and therefore fill up quickly and they did not produce as much food as yesterdays lunch which was a relief to us all. The boat left at 1.30pm and we made our way around the island, past the homestay and onwards to the <a href="http://en.wikipedia.org/wiki/Mangrove" target="_blank">Mangrove forests</a> which we did not arrive at until nearly 5.30pm. We walked through the forest along a raised wooden platform exploring the trees and their amazingly alien like roots. Sunset arrived swiftly and we departed for Koh Kong where a tuk-tuk was awaiting our return. We felt the tour was amazing and our guide and driver were great, so we tipped them a few dollars as it was well deserved. The tuk-tuk drove us back to the tour operators and we grabbed our bags from the Dugout hotel as we were moving to a cheaper hostel. Big thanks to the Dugout for allowing us to leave our bags, whilst we were away, however on our return arrogance and rudeness seemed uncalled for, as well as asking for a tip for the girls who apparently looked after and carried our bags, but if tipping was not our thing, don&#8217;t worry about it. Even though it is in many review books, we are not sure how long it will last with attitudes like that and at $16 a night in a tired room we did not feel a tip was warranted.</p>
<p>We moved up the road to were Ali and Carl were staying and we got a great room for $7 and then $10 the following night as it was Chinese New Year. We freshened up and all met for some evening food. Ice cream followed from a great place on the water front and then an early night before heading off in the morning on a bike ride into the Cardamon Mountains Conservation Corridor to find the Tatai River and Waterfall.</p>

<p>We arrived at 6.30am overnight from Hoi An, Justin and Jules were with us until this point and followed us to <a href="http://www.tripadvisor.co.uk/Hotel_Review-g293928-d649404-Reviews-Perfume_Grass_Inn-Nha_Trang_Khanh_Hoa.html" target="_blank">Perfume Grass hotel</a> to see if they could catch John and Lisa. Off they went and we couldn&#8217;t check into our room so we walked over the road to the beach and found a spot to have some home made brekkie. We walked along the beach for an hour before heading back to claim our free tea and coffee from the hotel. Still no check in so we left the bags, freshened up and decided to rent a moto for the day at 5$ &#8211; not too pricey at all.</p>
<p>Our destination was <a href="http://www.lonelyplanet.com/vietnam/south-central-coast/doc-let-beach" target="_blank">Doc Let beach</a>, one of the top beaches in Vietnam, it was a little cloudy but we thought we&#8217;d go on an adventure. We had some directions outlined in the Lonely Planet and a map from the hotel, we knew it would take us a while so off we went. After about half an hour on the high way we checked at a restaurant to make sure we were on the right tracks. Just keep going straight&#8230;so we did, passed through some small towns in the direction of going north and then eventually after stopping to get some more fuel we saw a landmark for Honda Port which was mentioned in the LP. After 20 minutes or so of riding along the coastal road we decided to turn around as we got closer to the Honda factory which we knew wasn&#8217;t the location of the beach. We decided to turn back on ourselves and ride through a few small villages, getting hungry we pulled into a small lane which ended at the sea. We saw a family cooking some local food for their stall and asked to sit down there and eat, they fed us amazingly and we even got some wonderful fresh spring rolls thrown in. It was very cheap at aroud a pound for us both and they were very welcoming indeed, they also pointed us towards Doc Let beach, so off we went in the hope of finding our destination.</p>
<p>We rode past the sign after about 5 minutes on the bike and more traveling through lovely little villages, further up the road there is a turning for the beach and we had to pay a 10,000 dong entrance fee each as well as 5,000 dong for parking the bike. Once settled we wandered off into the beach resort which has been set up a little like a summer camp, although not a lot was going on as the weather was closing in and the afternoon was a grey one. We still found beauty in the place though, the sand is powder white and the waves are very soft compared to <a href="http://wikitravel.org/en/Nha_Trang" target="_blank">Nha Trang</a>. We stayed for an hour and then made our way back to Nha Trang without stopping it took us 50 minutes, both arriving with a numb bum! Later on we checked in, showered and went to grab some food &#8211; Cafe Des Amis - not a great recommendation by the Lonely Planet to say the least!!</p>
<p>Back to hotel, bed.</p>

<p>Got up fairly early and went out for a run along the beach, quite fresh and clear air. Ran for about half an hour and then stopped to stretch on the grassy area near the beach. Helen was doing some yoga and was interrupted by a Swiss yoga teacher &#8211; dressed in nothing more than a faded pair of orange shorts and sweatband. Classic! He wanted to talk to us about Ayurvedic Yoga, we&#8217;re quite interested in Ayurveda anyway and obviously loving yoga so asking if it was free (which it was) he proceeded to talk to us for about half an hour and we went through some postures. Funny little interruption.</p>
<p>Back to the hotel for a good breakfast &#8211; omlette, bread and fruit salad.</p>
<p>We spend most of the day on the beach, Helen had been feeling unwell and we needed some down time. We found a place further up the beach called Louisiane where we were able to hire sun-loungers with umbrella for the day for a pound each including use of the pool. The sea was really rough going out with very few people going into swim so it was an added bonus using the pool.We enjoyed beer and a cocktail and stayed there until about 2.30pm. Afterwards we went for a walk up to the bridge which is around 4 km away heading north on the beach front. Many locals live in shanty town like houses around there so we wanted to head up and see what it was like. The light was quite moody which added a nice rocky feel to the images and the kids were very playful as always.</p>
<p>On our way back we walked via the market and eventually made our way back to Perfume Grass. Later on we went out to Cafe Cyclo &#8211; LP recommendation and joined Lisa and John who were already eating there. The food was good and not too pricey either. We went back to the hotel and packed for the following day. We had changed our open bus ticket to go onto Mui Ne as opposed to Dalat as we craved a little more beach time, plus Justin and Jules were there too so we knew we&#8217;d have a laugh meeting up with them again. It cost a furhter 100,000 between us to change the ticket which isn&#8217;t that much at all.</p>
<p>We finished the night with an ice-cream for Helen , some strange green yoghurt for Dave and an episode of The Peep Show.</p>

<p>We arrived at 8am in <a href="http://en.wikipedia.org/wiki/Hu%E1%BA%BF" target="_blank">Hue</a> after a bumpy overnight sleeper journey. The bus was packed with westerners which made a change from those our travels in China, but it was nice as Helen befriended a South-American Fashion journalist and watched a few episodes of Arrested Development. When we got to Hue we took our bags off the coach and were pointed towards the Google Hotel, here we had a quick pick me up in the form of some fruit and coffee and then went off to see a few sights before our onward bus scheduled at 1.30pm.</p>
<p>Hue is quite small so it&#8217;s easy enough to walk across the river and over to the main sights. It was raining and quite humid, and we passed by a war museum so stopped to take a look and saw some old American army tanks before taking in an exhibition on the <a href="http://en.wikipedia.org/wiki/Vietnam_war" target="_blank">Vietnam war</a>. It&#8217;s not that big an exhibition but was a good introduction to the developments of the Vietnam war. As we left along very slippery paths we walked to the <a href="http://www.vietnam-beauty.com/vietnam-world-heritages/historical-heritage/3-historical-heritage/29-hue-imperial-city.html" target="_blank">Imperial Palace</a> which is probably the main attraction in Hue. It only cost 10,000 dong each which is around 33p so we forked out the cash and went inside along with several other tourists. After a brief stop to feed the fish we continued to walk around the Palace grounds and ruins, the site is mainly made up of old Palace rooms, some have been preserved to their original use whilst many others are still as they were since being bombed in the war. Tiled floors still form the ground to many rooms but only have wooden structures and the odd wall that show where the walls would have been.</p>
<p>After taking in the Palace grounds we walked to a Vegetarian restaurant on our way back to the hotel to meet the bus. We chose a few local dishes along with some rice and really enjoyed it. We then made our way back to the hotel and got the bus at 1.30pm as scheduled bound for <a href="http://wikitravel.org/en/Hoi_An" target="_blank">Hoi An</a>. We arrived there at around 5pm and went to find a hotel, we had provisionally booked one place but en-route were offered a cheaper and quite decent room so we opted for this one, breakfast was included and the room was a good size with en-suite. After checking in we went to explore this picturesque river-side town, as we ventured towards the riverside we became enveloped by old quaint houses, tailoring shops, restaurants and souvenirs. It is a very pretty town indeed and almost felt like a stage-set at times, perhaps a little over the top in terms of restoration and just oozed hundreds of western tourists on every street.</p>
<p>We opted for the Morning Glory restaurant close to the riverside but not on the river front for our evening meal. This came in the form of Vegetarian curry, salad, soup and grilled aubergine, each dish was bursting with flavour so based on this we decided to book ourselves onto their cooking class in two days time. Back to the hotel via some more quaint streets, tailoring shops and light displays. before an much needed early night was had.</p>

<p>On the morning of the 8th we enjoyed a good breakfast from the Hotel including a choice of eggs, bread, fruit and juice. Afterwards we set off to research a few options for tours in the area. We had planned to do a tour to <a href="http://en.wikipedia.org/wiki/Ninh_B%C3%ACnh_Province" target="_blank">Ninh Binh</a> and <a href="http://www.lonelyplanet.com/vietnam/north-central-vietnam/tam-coc" target="_blank">Tam Coc</a> with Maayke and Paul so were shopping around the various fake <a href="http://sinhcafe.com/index.htm" target="_blank">Sinh Cafe</a>&#8216;s across the city to find out the best deals. They&#8217;d already sourced somewhere that would do the trip for $16 with bikes included for one part of the trip. After a while and battling through the many scooters we ended up back at the same place and booked the trip for the price they&#8217;d agreed. We&#8217;d arranged a part-payment trip in case there was anything we weren&#8217;t happy with; often you&#8217;ll find there are many cheap tours and you&#8217;ll never know which one is better than the other. We thought it would be a good day out of the city anyway so went along with this.</p>
<p>Afterwards we went off to do some more research into the other part of our trip interest: the <a href="http://www.halongbay-vietnam.com/" target="_blank">Halong Bay</a> tour. Helen had read up on a few more reputable companies offering slightly better value tours so we started with Ethnic travel who didn&#8217;t really have a very welcoming atmosphere and soon decided we wouldn&#8217;t be booking with them. We found Ocean tours around the corner who&#8217;s 3 day 2 night tour with one night on the Island in a bungalow to be the best on offer but still had a look around. In doing so we met Justin and Jules who were doing the same research as us, Dave stopped them as soon as they walked out of one of the other tour agencies and we started chatting about what information that have and so on. Before long we were enjoying lunch with them and went back to Ocean Tours to get a better feel for what they were offering.</p>
<p>After a few more drinks, a walk around the city into the French Quarter and then back to Ocean Tours we&#8217;d decided this was THE tour for us and we all booked it together! We knew that at $175 we were paying a lot more than many other tours on offer but decided that it sounded far better than some of the other less tailored trips and we liked the sound of staying in a bungalow for the night!!</p>
<p>So with that sorted we went back to our now hostel Gecko (we&#8217;d moved out that morning as we wanted to save some money by staying in a dorm and rendezvous had no more availability) met up with the others and went out for food to Koto, a restaurant in the south-west of the city which trains up street-kids and the homeless to be chefs and working in the kitchens. The food was very good indeed and it was packed so it was good to see the restaurant supported in this way.</p>
<p>On the 9th we were picked up at 8am for our day trip to Ninh Binh and Tam Coc. The weather had been pretty chilly since we&#8217;d arrived in Hanoi although we were acclimatised to this and to us it felt okay, but there was some rain forecast for the day so we took extra layers with us. Leaving Hanoi the bus stopped several times to pick up other people and groups on the tour and before long there were around 20 on the bus. It took around 2.5 hours to get to Ninh Binh with one stop and we spent a lot of this time chatting to Bekka and her husband from America who are now living in Beijing, we exchanged stories of China and it passed the time nicely.</p>
<p>Our first stop was at 2 temples, which held the first and second Emperors of Vietnam. A few people on the bus were a little annoyed as they&#8217;d been sold the bus ticket as bus fare to Ninh Binh and not a tour, they had to go to the temples first before being dropped off in Ninh Binh…be warned this happens quite a lot over here!</p>
<p>The temples were okay but we have seen many amazing shrines and temples over our time traveling, so it takes an amazing day with the weather and a spectacular site to impress us! Have we become Temple snobs…?</p>
<p>We were supposed to be cycling from the temple site to Tam Coc where the rest of the tour bus was traveling to for lunch. As it was raining and very windy we decided against this and joined the bus to go straight to the restaurant. It was a good job we did as it would have taken us much longer to reach the port than the tour allowed for and would probably have missed our lunch…to be fair though that wouldn&#8217;t have been such a bad thing. The vegetarian option for Helen and a few others was quite poor with the best thing on offer being a plate of chips for 7 to share. We mentioned this to the tour guide and he was very apologetic but it&#8217;s more down to the restaurant than him.</p>
<p>Following lunch we went over the road to the rowing boat tour and met the lady driver who took us out on her boat. She was quite agile often using her feet to row and we had a paddle each so we could both add some gusto to the pace. We passed under caves and one by one the boats traveled along the river. It&#8217;s supposed to be the land version of Halong Bay with many karst peaks engulfing the landscape. It was quite similar to what had surrounded us in Yangshou and we both felt Yangshou is a more impressive place.</p>
<p>The boat tour was good fun, and we even bought our guide a drink and snack which she shared with us, we had to bargain for this and the woman selling the goods on her own boat wouldn&#8217;t leave us alone until we did! We didn&#8217;t mind too much though as we felt our guide was doing a very good job indeed.</p>
<p>At the end of the tour we were pressured into giving a tip to our guide but we felt we&#8217;d already tipped her in buying her drinks and snacks along the way so made for a sharp exit to the bus. There were people selling souvenirs and market items along the pier front and some were selling dog meat. By now we have become used to seeing this sort of thing on sale, funny how you get used to customs so quickly but its always the topic of conversation when you first see it.</p>
<p>We had a small confrontation with our tour guide on the bus back to Hanoi. As we had monies outstanding to pay he was asking for us to complete the payment. We mentioned that we&#8217;d agreed a price including bike hire but as we didn&#8217;t use the bikes then we wanted to pay the price quoted to us excluding bike rental. He got quite angry about this and said we have to pay for the bikes as the restaurant paid for fuel to get them to the site for us to cycle, but we saw many bikes there so we felt this was not the case. We were happy to pay but just not for the whole fee and he didn&#8217;t say when we said we weren&#8217;t taking the bikes that we would still have to pay for their rental. He rang our tour company and Helen agreed a price over the phone which mean&#8217;t we paid some of the cost towards the bike but not all. Our chirpy tour guide was no longer quite so happy and he settled into a grump until the bus stopped to pick up his girlfriend.</p>
<p>Another lesson learned! Still we had managed to get back some of the money so it was good to know there are some principles in place. When we got back we ate at a great local restaurant and for a good price. We went back and packed ready for our Halong Bay trip leaving at 8am the next day.</p>

<p>We left <a href="http://lotuslandhostel.spaces.live.com/" target="_blank">Lotusland</a> at 7.45am to walk to the International Tourism Distribution Centre only 15 minutes walk away which was perfect for us leaving Nanning. The bus station we came into from Yangshou was at least a 40 minute bus journey from the centre so we were pleased not to be making this journey again. We were joined by a few other backpackers at the bus station and saw the first bus leave packed with passengers at 8am, ours was at 8.30am and was considerably less full.</p>
<p>We had a hostess who handed out a bread snack and water to all passengers and it was quite a smart bus. We traveled through Southern China  and saw more agriculture and rice fields along the way, it was still cold and dull. We stopped once for a toilet break and then again for lunch, we were only about 20 minutes from the border at this stage but we were provided with a free meal which consisted of egg and tomato, tofu and rice it wasn&#8217;t too bad. There were also quite a few touts waiting to exchange Chinese RMB to Vietnamese Dong. We didn&#8217;t have any Dong ready with us so we changed what we had left of the RMB which was around £10&#8242;s worth. The exchange rate isn&#8217;t great when you do this with touts so we&#8217;d probably recommend to change only what you need for taxi&#8217;s etc on the other side. One girl changed around £200 worth and we don&#8217;t think she did so well on the exchange rate.</p>
<p>The journey from Nanning to the border took around 4 hours and as we got the border the bus pulled into a parking lot, we exited with our bags and were carted off on a little gold-like buggy to the Chinese exit border. It took around 40 minutes to complete exit from China and entry into Vietnam, with 5 or so passport checks. It was pretty relaxed and we were asked a few questions on the Vietnamese side but they were friendly enough and off we went to another golf buggy before being shipped onto another bus. This bus was full and we could only just get a seat.</p>
<p>The journey to <a href="http://en.wikipedia.org/wiki/Hanoi" target="_blank">Hanoi</a> took 5 hours with one break at a restaurant/service area. The bus was okay and again we had a hostess on board handing out water. We were pleasantly surprised with the journey as we had read about some horror stories on the Vietnamese buses, but all in all it was pretty swift. The traffic coming into Hanoi was very busy so it took a while to get into the city. Once we arrived a lady came on board and asked to speak to the westerners, we had read that this would happen so were a little skeptical as to whether to take her advice or not. Contrary to this though she was quite helpful and as a group of 4 she advised on how to bargain for the taxi and made sure we knew how not to get ripped off!!</p>
<p>We traveled with a Finnish couple we&#8217;d met on the bus to <a href="http://www.hanoirendezvoushotel.com/" target="_blank">The Hanoi Rendezvous</a> and agreed a price with the taxi driver. We knew that we&#8217;d be paying around 100,000 dong between us but at first he was quoting $150! Dave kept getting out of the taxi refusing to agree to that price and we eventually managed to get him to agree to our price. The journey was around 15 minutes (the taxi driver had said it would be 50 km!) be prepared for scams!! When we arrived at the Rendezvous he stopped the car a little away from the hotel and said it was much further asking for more money. We knew where the hotel was though and didn&#8217;t take any of his shit. We paid the price and that was that. Perhaps getting into Hanoi from your bus or airport is where you&#8217;re more likely to get ripped off by the taxi drivers as you&#8217;ll be new to the city so just be prepared for this.</p>
<p>At the Rendezvous we checked into our spacious 6 bed dorm room, practically each bed was a mini double with good spacing in between and a shared en-suite. We were paying $7 each for this which was considerably more than in China but it had great reviews and included a good breakfast. We inquired at reception about a few options for getting around Vietnam and as we had no guide book yet we went off to a bookshop called <a href="http://www.bookwormhanoi.com/" target="_blank">The Bookworm</a> to get ourselves a Lonely Planet.</p>
<p>It was around a half hour or so walk through the busy city streets to Bookworm heading north of the city centre to the second lake. We picked up a photocopy version for 150,000 dong checking the quality first as often the maps are very pale so it&#8217;s good to go through the pages. We asked for their recommendation on a good place to eat nearby and were instructed to go to Food Shop (45). We enjoyed some excellent vegetarian Indian food and the ventured through the streets back to the Hotel. When we got there we saw Maayke (from Yangshou) and her friend who were also in the same dorm, we had previously arranged to meet them here so it wasn&#8217;t so much of a coincidence. We discussed trip options and then chatted in the cafe area for a while before hitting the sack.</p>
